Freezer Breakfast Sandwiches

Always in a rush in the morning and never have time to enjoy a meal? Try meal-prepping these freezer breakfast sandwiches that taste just like a sausage and egg McMuffin. Except it’s at home and even better!

The Breakfast Sausage

Let’s start by making the sausage! Of course, you could buy them already prepped or even frozen from the grocery store but it’s so easy to make from scratch and tastes way less processed. Here are all the ingredients you need:

  • ground beef
  • ground turkey
  • brown sugar
  • sage
  • thyme
  • onion powder
  • garlic powder
  • paprika
  • salt
  • black pepper

Just add all the ingredients above to a mixing bowl and combine evenly. Divide into 5 to 7 equal portions and smash into thin round patties. For sizing reference, make them slightly larger than the size of the English muffin you will be using. They shrink as they cook!

Heat a pan over medium heat and add a little bit of olive oil and butter, optional. Add the patties in and cook in batches, making sure not to crowd them. Cook for 3 to 4 minutes on one side until seared, flip over, and repeat. Remove from the pan when fully cooked through. Now you know how to make breakfast sausage from scratch!

How to Make the Eggs

Moving on to the eggs, which is probably the easiest part! There are so many ways to make the eggs and all are equally delicious. Feel free to prep them as you desire but let’s get into how I did it for this recipe. I wanted to mimic the McMuffin as closely as possible so I purchased these egg molds.

Just place the molds on a pan over medium heat and spray with avocado oil. Crack an egg into each mold and sprinkle with salt and black pepper. Cover the pan with the lid until the egg whites are fully set and then pop off the mold and transfer the egg to a plate. If the mold is not releasing right away, run the edges with a sharp knife and it’ll slide right out.

NOTE: If you use the mold and are having issues with leaking, your pan is probably not perfectly flat just like mine. To avoid leaking, press down the circle mold immediately after cracking the egg in just for 15 seconds or so until the edges are set and then let go. If it does leak, no worries at all. Just wait for the egg to fully cook and then cut it off or fold it in and place it into the sandwich and no one will ever know!

Assembling the Sandwiches

The eggs and sausage are prepped! All that’s left to do is toast the English muffins. Just slice them open, butter them up, and place them on a baking tray lined with parchment paper. Toast them just until golden around the edges.

Add a slice of cheese, sausage, and egg to each sandwich and seal them up! Wrap tightly with sandwich paper and store in the freezer to enjoy whenever.

Freezing and Reheating the Sandwiches

These sandwiches can stay in the freezer for up to 3 to 4 months. Whenever you want to enjoy one, just pop it in the microwave while it’s still wrapped in sandwich paper. Microwave for 90 seconds until fully cooked and hot. The cheese should be ooey and gooey. Feel free to add in a sauce at this step if you’d like such as mayonnaise or chipotle aioli. You could also add avocado if that’s your vibe and enjoy!

Variations to Try

There are so many ways to switch this recipe up and make to your taste! Let’s start with the eggs. First off, to get the eggs perfectly circular like McDonald’s, use molds like these. If you don’t have these/don’t want to purchase them, you can make:

  • scrambled eggs
  • a regular fried egg and just fold the hanging sides in
  • bake eggs in a tray in the oven and cut into squares

Now let’s jump to the protein. This recipe uses a combination of ground turkey and ground beef to make breakfast sausage. You can also just use only turkey or only beef. Another option is to skip the sausage entirely and opt for turkey or beef bacon. If you don’t want any meat, just keep it vegetarian with the egg and cheese.

The best bread to use for freezer breakfast sandwiches are English muffins because they freeze and reheat well while maintaining their integrity. If you do not plan to freeze these, you could swap the muffins for bagels, brioche buns, or even sandwich bread!

Ingredients

SAUSAGE
  • 1/2 pound ground beef 85/15
  • 1/2 pound ground turkey
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 1 teaspoon thyme
  • 1 teaspoon sage
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
EGG
  • 5 large eggs
  • salt, to taste
  • black pepper, to taste
  • oil spray
FOR ASSEMBLY
  • 5 cheddar or American cheese slices
  • 5 English muffins, buttered and toasted

Instructions

  1. To a bowl, add ground beef, turkey, brown sugar, salt, thyme, sage, paprika, garlic powder, onion powder, and black pepper.
  2. Combine together well and divide into 5 to 6 equal portions.
  3. Shape each portion into a thin patty, slightly larger than the size of the English muffin as it will shrink as it cooks.
  4. Heat a frying pan over medium heat. Add the olive oil and butter and melt down.
  5. Add the sausage patties, a few at a time to the pan so they're not crowded.
  6. Cook on one side for 3 to 4 minutes until seared and then flip over and repeat. Remove from the pan when fully cooked and repeat with the rest of the sausages.
  7. Preheat oven to 350°F. Line a tray with parchment paper.
  8. Cut the English muffins open in half and lay on the tray. Brush with butter or spray with oil.
  9. Toast the muffins in the oven for 6 to 8 minutes until golden. Take it out of the oven.
  10. To a large and flat frying pan over medium heat, make the eggs. Grease the egg molds and crack an egg into each one. Sprinkle with salt and black pepper. Cover and cook until the whites are all set. Remove the mold and take off the heat. Repeat until you have 5 eggs cooked.
  11. Assemble each sandwich in this order: bottom English muffin, slice of cheese, sausage patty, egg, top English muffin.
  12. Wrap each one in sandwich paper and store in a ziploc bag or container in the freezer.
  13. To enjoy, pop in the microwave for 90 seconds and enjoy warm!
Tips & Notes
If you don't have the egg molds, just make scrambled eggs or a sheet pan egg bake and cut into squares.

Made this & it was really good! Next time, I will only use ground turkey though. The beef gave it more of a hamburger taste imo.
