Snickers Granola

Making the Granola

Let me show you how easy it is to make granola from scratch! It comes together in one bowl and when you make it at home, you can customize it as much as you want to your taste. I promise you may never be tempted ever again to buy granola at the store because it is so much better homemade. The granola at the store does not have enough big clumps for me! So let’s get into it.

In a small bowl, combine the maple syrup, brown sugar, salt, vanilla extract, coconut oil, and egg white. The egg white acts as a binder to help create those big crunchy clumps. Mix until well combined. Then, in a large mixing bowl, add the old-fashioned oats and pour in the prepared “batter.” Feel free to add in nuts along with oats, I added chopped walnuts and peanuts but if they’re already toasted, you can add them in after you make the granola. Use a rubber spatula to ensure that every oat is evenly coated with the mixture. Transfer the coated oats to a large baking tray, spreading them out evenly in a single layer. You want to make sure the oats are not too crowded so make sure to use a tray that’s big enough or bake in two batches.

Press down firmly to create those irresistible crunchy clusters. Slide the tray into the preheated oven and bake for 20 to 23 minutes, or until the granola turns a beautiful golden brown and becomes crispy all around. Rotate it half way to make sure it toasts evenly. Keep a close eye on it so it doesn’t get too toasty!

Once baked to perfection, remove the granola from the oven and allow it to cool completely for about 30 minutes. It can take longer! You want to make sure it cools completely because of two things. The first is you don’t want the chocolate to melt when you add the chips in. Second, if it’s still warm and you put it into a container, it will steam up and make the granola lose its crunch. Once cooled, break apart the granola into big, satisfying chunks. Now, it’s time to take this granola to the next level and create that Snickers taste.

Add in the chopped Medjool dates which act as the caramel, peanuts, chocolate chips, and peanut butter chips. The peanut butter chips are completely optional. The peanuts already add a peanut butter flavor profile. Gently mix everything together until all the delicious ingredients are evenly distributed throughout the granola. And now it’s ready to enjoy in a yogurt bowl or in a thick smoothie bowl.

Storing Granola

Transfer your Snickers Granola to an airtight container to keep it fresh and crunchy. It can stay fresh up to 2 weeks if it lasts that long. ONLY if it lasts that long!

Ingredients

OATS MIXTURE
  • 4 1/2 cups old-fashioned oats
  • 1/3 cup maple syrup 
  • 1/4 cup brown sugar
  • 3/4 teaspoon salt
  • 1 1/2 teaspoon vanilla extract
  • 2/3 cup coconut oil
  • 1 egg white
OTHER
  • 1/2 cup chopped dates
  • 1/3 cup chopped peanuts
  • 1/2 cup chocolate chips
  • 1/4 cup peanut butter chips

Instructions

  1. Preheat oven to 350°F.
  2. To a small bowl, combine maple syrup, brown sugar, salt, vanilla extract, coconut oil, and an egg white. Mix together well.
  3. In a large mixing bowl, add the oats and pour the "batter" in. Use a rubber spatula to mix everything well so it's all coated evenly.
  4. Transfer to a large baking tray and spread out evenly in one layer. Press down well to create a more chunky granola.
  5. Bake for 20 to 23 minutes until golden and crispy all around. Rotate halfway.
  6. Take out of the oven and allow to cool completely, for around 30 minutes.
  7. Break apart the granola into big chunks.
  8. Add the chopped dates, peanuts, chocolate chips, and peanut butter chips. Mix together.
  9. Store in an airtight container to keep fresh and crispy to enjoy!
Tips & Notes
  • For a smaller portion, half the recipe!
  • Add less brown sugar or maple syrup if you want it less sweet.
  • Nuts are optional. You can add bake them with the oats if they're not toasted or add them in after if they are already roasted.
