Ingredients

  • 2 large chicken breasts, 1.5 pounds, cut into thin slices
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 3 tablespoons olive oil
  • 3 to 4 tablespoons adobo paste
  • 2 teaspoons fresh garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon coriander
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1 teaspoon salt, more to taste
  • 2 tablespoons honey
  • 1/4 cup shredded Mexican cheese
  • chopped cilantro

Instructions

  1. Preheat oven to 425°F.
  2. To a bowl, add the chicken, olive oil, adobo paste, garlic, chili powder, coriander, oregano, onion powder, cumin, salt, and honey. Toss together.
  3. Place bell peppers and marinated chicken on a sheet pan.
  4. Pop in the oven to bake for 20 minutes or until the chicken is cooked through and has a sear.
  5. Take out of the oven and optional, add cheese on top and let it melt in the oven for 1 to 2 more minutes.
  6. Garnish with chopped cilantro and serve warm with tortillas, sour cream, and limes!
Tips & Notes
  • Feel free to add sliced red onion along with the bell peppers to make the fajitas!
  • Only add the adobo paste not the chipotle peppers from the can or else it will be very spicy.

This was just yummy and delicious. The blend of ingredients with the spicy, sweet, and the complex warmth of spices made this dish enjoyable for the entire family. Who wouldn’t love a sheet pan meal for easy cleanup too. The only tweak I made was to the amount of adobo paste. Instead of 3 Tbsp I used 1 Tbsp so it wasn’t spicy for the family.

I made this recipe today and the taste is amazing. Central Market whole wheat tortillas go great with this. The only change for me was that I only had smoked paprika instead of regular paprika. The honey and spices make a perfect sweet and spicy combination.

Loved this recipe! I made it using a jarred diced chipotle peppers to avoid the oil in typical adobo sauce – otherwise, I followed the recipe, and it was delicious is Siete cassava tacos! Saving the rest to eat with rice for lunches during the week.
