Honey Chipotle Chicken Fajitas
Ingredients
- 2 large chicken breasts, 1.5 pounds, cut into thin slices
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 3 tablespoons olive oil
- 3 to 4 tablespoons adobo paste
- 2 teaspoons fresh garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon coriander
- 1 teaspoon paprika
- 1 teaspoon oregano
- 1/2 teaspoon onion powder
- 1/2 teaspoon cumin
- 1 teaspoon salt, more to taste
- 2 tablespoons honey
- 1/4 cup shredded Mexican cheese
- chopped cilantro
Instructions
- Preheat oven to 425°F.
- To a bowl, add the chicken, olive oil, adobo paste, garlic, chili powder, coriander, oregano, onion powder, cumin, salt, and honey. Toss together.
- Place bell peppers and marinated chicken on a sheet pan.
- Pop in the oven to bake for 20 minutes or until the chicken is cooked through and has a sear.
- Take out of the oven and optional, add cheese on top and let it melt in the oven for 1 to 2 more minutes.
- Garnish with chopped cilantro and serve warm with tortillas, sour cream, and limes!
Notes
- Feel free to add sliced red onion along with the bell peppers to make the fajitas!
- Only add the adobo paste not the chipotle peppers from the can or else it will be very spicy.
