Honey Chipotle Chicken Fajitas

Honey Chipotle Chicken Fajitas is the easiest dinner you can make in the oven, in one sheet pan, and in under 30 minutes! It's a bit sweet, a bit spicy, and packed with so many vibrant colors. Meal prep it ahead of time or enjoy the day of in tacos!

Ingredients

  • 2 large chicken breasts, 1.5 pounds, cut into thin slices
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 3 tablespoons olive oil
  • 3 to 4 tablespoons adobo paste
  • 2 teaspoons fresh garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon coriander
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1 teaspoon salt, more to taste
  • 2 tablespoons honey
  • 1/4 cup shredded Mexican cheese
  • chopped cilantro

Instructions 

  1. Preheat oven to 425°F.
  2. To a bowl, add the chicken, olive oil, adobo paste, garlic, chili powder, coriander, oregano, onion powder, cumin, salt, and honey. Toss together.
  3. Place bell peppers and marinated chicken on a sheet pan.
  4. Pop in the oven to bake for 20 minutes or until the chicken is cooked through and has a sear.
  5. Take out of the oven and optional, add cheese on top and let it melt in the oven for 1 to 2 more minutes.
  6. Garnish with chopped cilantro and serve warm with tortillas, sour cream, and limes!

Notes

  • Feel free to add sliced red onion along with the bell peppers to make the fajitas!
  • Only add the adobo paste not the chipotle peppers from the can or else it will be very spicy.
