Making the Beef Filling

The key to a good chopped cheese is a super flavorful minced beef packed with lots of umami flavor. Think of the beef filling as if you took a patty like the one in a burger and chopped it up with sauteed peppers and onions. A lot of the bodegas in New York use a signature blend of spices like adobo seasoning and this recipe pays homage to that.

Here are all the ingredients you need:

  • ground beef, 85/15 or 90/10
  • unsalted butter
  • olive oil
  • garlic
  • onion
  • bell pepper
  • adobo seasoning
  • smoked paprika
  • cayenne powder
  • black pepper
  • salt
  • coriander
  • cheese

Start by sauteing the onions, bell peppers, and garlic in olive oil and butter until softened and caramelized a bit. You can use red or green bell peppers or a combination of both. Once cooked, move the peppers to the side in your pan and add the ground beef. Season with all the spices above and mix all together. Break apart the ground beef as it cooks with a rubber spatula. Once the ground beef is browned, it’s time for some cheese!

You can use American cheese, cheddar cheese, or any thing you fancy. Divide the ground beef into 2 to 4 equal sections depending how small or big your sandwiches are. Add 1 to 2 slices of cheese on top of the ground beef and cover to let the cheese melt for a minute or two and that’s it!

Assembling the Sandwich

Now that beef filling is made, let’s assemble the sandwich! The typical bread used for chopped cheese is any sort of soft roll like a hoagie. Just go for any bread you prefer to eat a sub in. Start by toasting the bread with a little bit of butter.

Once toast, add ketchup and mayo to both sides. Add lettuce and tomatoes. Sprinkle with salt and pepper and add the avocado on. You can also add some beef or turkey bacon here. Add the beef and cheese on top and seal the sandwich shut. Cut in half and enjoy!

You can also toast it after assembling the sandwich like a panini and press it down if you’d like but that’s completely optional.

Variations to Try

There are so many ways to switch up a classic chopped cheese sandwich! The original New York-style chopped cheese is delicious as is but there are still so many ways to have fun with it and still just be as good.

First, let’s start with the protein. Most chopped cheeses use ground beef but if you want to make this lighter, you can always use ground turkey or chicken.

Moving on to the toppings in the sandwich. A chopped cheese traditionally just has lettuce and tomato but I also like to add avocado in there. You could also add raw or grilled onions.

Finally, for the sauce! A simple chopped cheese just has ketchup and mayo. You could try adding a chipotle mayo instead though or even truffle mayo. A garlic and herb aioli would also be delicious!

Ingredients

GROUND BEEF
  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 2 teaspoons minced garlic
  • 1 teaspoon adobo seasoning
  • 1 teaspoon coriander
  • 1 teaspoon smoked paprika
  • dash of cayenne, to taste
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 green or red bell pepper, chopped
  • 4 American cheese slices
FOR ASSEMBLY
  • 2 rolls or sub bread, toasted
  • shredded lettuce
  • tomatoes, sliced
  • avocados, thinly sliced
  • cooked beef bacon, optional
  • ketchup
  • mayonnaise

Instructions

  1. Heat a skillet over medium-high heat and add the olive oil and butter.
  2. Add the onions, peppers, and garlic. Saute for 3 to 4 minutes until softened.
  3. Add the ground beef and season with adobo, coriander, smoked paprika, cayenne, black pepper, and salt. Mix together.
  4. Let the ground beef cook for 5 to 6 minutes, breaking it up with a wooden spoon as it cooks and browns.
  5. Drop the heat to low. Divide the meat into two to four sections, depending on how small or large the sandwiches will be. Add 1 to 2 slices of cheese on top of each section. Cover and let the cheese melt, for about a minute or two.
  6. To some toasted bread, add avocado, lettuce, tomato, meat & cheese, ketchup, mayo, and optional bacon.
  7. Seal the sandwich shut and enjoy warm.
