Breakfast Sliders

If you’re looking to brighten your morning, try making these Breakfast Sliders! Fluffy creamy eggs, caramelized beef bacon, spicy chipotle aioli, and the best garlic and herb Hawaiian buns to seal the deal. Breakfast will never get any better than this!

The Garlic Butter

The first step is to prepare the garlic butter which is nothing fancy. It’s the perfect garlic butter recipe that is not only good for these breakfast sliders but even garlic bread, steak, fries, or chicken wings! Here’s everything you will need:

  • unsalted butter, melted
  • garlic cloves, minced
  • parsley, finely chopped
  • salt
  • black pepper
  • oregano
  • parmesan, grated

Just add all the ingredients above to a small bowl, mix together, and it’s ready to go! If it sets/hardens by the time you need to brush them on the rolls, pop it back in the microwave for 30 seconds to make it a brushable liquid.

Making the Chipotle Aioli

Every good sandwich needs an even better sauce, it’s just the rules. My favorite go-to sauce is chipotle aioli. I always make a fresh batch and keep it stocked in my fridge. It tastes so good in sliders, rice bowls, tacos, sandwiches and so much more!

This chipotle aioli is smoky, a bit spicy, and has a nice tang that adds so much flavor. In a small bowl, just combine all these ingredients and mix together:

You can buy a can of chipotle peppers in adobo paste from most major supermarkets in the international food aisle. I only use the adobo paste in the can for this recipe but if you would like it to be spicy, you can add 1 to 3 of the chipotle peppers to a blender and then add it to the sauce. I just like to add some sriracha instead for a bit of a spicy kick.

Assembling the Sliders

THE BACON: Now it’s time to cook the bacon. I use beef bacon but you can use turkey too. Add bacon to a hot pan over medium heat. Allow it to fry on one side until beautifully golden and crispy and then flip it over. Add a small sprinkle of brown sugar if you’d like at this step and continue to cook. It makes a huge difference in the taste and it’s the only way I make bacon. Once crispy and fully cooked, take off the pan.

THE EGGS: To a non-stick pan over medium heat, add oil or a little bit of butter. Crack the eggs in and allow it to cook low and slow. Break apart the yolks and slowly move the eggs around to make them scrambled but super fluffy. Optional, I love adding a bit of cheddar cheese to melt into the scrambled eggs! You can do this instead of adding cheese directly into the sandwich. Add salt and black pepper to taste and once the eggs are fully cooked to the way you like them, take off the pan.

ASSEMBLY: Cut the Hawaiian Rolls open down the middle between the top and bottom bun. Brush both sides with the garlic butter and bake in the oven just for a few minutes until golden and crispy. Start to assemble on the bottom buns. Add the chipotle sauce, thinly sliced avocado, then the eggs, and finally the beef bacon. Add the top bun on top and optional, brush with more garlic butter. Cut into individual sliders and serve warm to enjoy!

Ingredients

GARLIC BUTTER
  • 1/4 cup unsalted butter
  • 1 tablespoon parsley, finely chopped
  • 1 tablespoon garlic, finely minced
  • 2 to 3 tablespoons parmesan, grated
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon salt
CHIPOTLE SAUCE
  • 3/4 cup mayonnaise
  • 1/4 cup sour cream
  • juice of 1 lime
  • 1/2 tablespoon honey
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon chili powder
  • 2 to 3 tablespoons adobo paste
FOR ASSEMBLY
  • 1 package Hawaiian Rolls, 12 rolls
  • 10 ounces beef bacon
  • 2 teaspoons brown sugar
  • 8 to 10 large eggs
  • 2 tablespoons unsalted butter
  • salt, to taste
  • black pepper, to taste
  • 2 avocados, cut into thin slices

Instructions

MAKE THE GARLIC BUTTER
  1. To a small bowl, add the melted butter, parsley, garlic, parmesan, salt, black pepper, and oregano. Mix together and set aside.
MAKE THE CHIPOTLE SAUCE
  1. To make the chipotle sauce, mix together mayonnaise, sour cream, lime juice, honey, black pepper, chili powder, and adobo chipotle paste in a small bowl. Once smooth, set it aside.
MAKE THE SLIDERS
  1. Preheat the oven to 375°F.
  2. To a pan over medium heat, add butter or oil. Crack the eggs in and allow it to cook low and slow.
  3. Break apart the yolks and slowly move the eggs around to make them scrambled and super fluffy. Optional, I love adding a bit of cheddar cheese to melt into the scrambled eggs!
  4. Add salt and black pepper to taste and once the eggs are fully cooked to the way you like them, take off the pan.
  5. Now it's time to cook the bacon. Add bacon to a hot pan over medium heat. Allow it to fry on one side until golden and crispy, then flip it over. Add a sprinkle of brown sugar if you'd like at this step and continue to cook. Once crispy and fully cooked, take off the pan.
  6. Slice the rolls open in half and lay on a baking sheet lined with parchment paper.
  7. Brush both sides with the garlic butter and bake in the oven for 10 minutes just until toasted and a bit crispy.
  8. Take out of the oven and assemble. To the bottom bun, add chipotle sauce, avocado, eggs, and the bacon. Add the top buns on top.
  9. Slice into individual sliders and enjoy!
