Let’s make a New York classic sandwich, the famous chopped cheese! Think of it as a cheeseburger all chopped up in a sub and packed with fresh vegetables and a drizzle of ketchup and mayo. Don't knock it until you try it!

Ingredients

GROUND BEEF

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 2 teaspoons minced garlic
  • 1 teaspoon adobo seasoning
  • 1 teaspoon coriander
  • 1 teaspoon smoked paprika
  • dash of cayenne, to taste
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 green or red bell pepper, chopped
  • 4 American cheese slices

FOR ASSEMBLY

  • 2 rolls or sub bread, toasted
  • shredded lettuce
  • tomatoes, sliced
  • avocados, thinly sliced
  • cooked beef bacon, optional
  • ketchup
  • mayonnaise

Instructions 

  1. Heat a skillet over medium-high heat and add the olive oil and butter.
  2. Add the onions, peppers, and garlic. Saute for 3 to 4 minutes until softened.
  3. Add the ground beef and season with adobo, coriander, smoked paprika, cayenne, black pepper, and salt. Mix together.
  4. Let the ground beef cook for 5 to 6 minutes, breaking it up with a wooden spoon as it cooks and browns.
  5. Drop the heat to low. Divide the meat into two to four sections, depending on how small or large the sandwiches will be. Add 1 to 2 slices of cheese on top of each section. Cover and let the cheese melt, for about a minute or two.
  6. To some toasted bread, add avocado, lettuce, tomato, meat & cheese, ketchup, mayo, and optional bacon.
  7. Seal the sandwich shut and enjoy warm.
