Heat a skillet over medium-high heat and add the olive oil and butter.
Add the onions, peppers, and garlic. Saute for 3 to 4 minutes until softened.
Add the ground beef and season with adobo, coriander, smoked paprika, cayenne, black pepper, and salt. Mix together.
Let the ground beef cook for 5 to 6 minutes, breaking it up with a wooden spoon as it cooks and browns.
Drop the heat to low. Divide the meat into two to four sections, depending on how small or large the sandwiches will be. Add 1 to 2 slices of cheese on top of each section. Cover and let the cheese melt, for about a minute or two.
To some toasted bread, add avocado, lettuce, tomato, meat & cheese, ketchup, mayo, and optional bacon.
Seal the sandwich shut and enjoy warm.
