This recipe is what I make when I want banana bread vibes but for breakfast and without committing to a full loaf. It’s faster, already portioned, and honestly more fun to eat. Everything comes together in one bowl, bakes all at once, and somehow tastes like you put in way more effort than you actually did.

This recipe uses simple ingredients you probably already have:

How to Make Banana French Toast Muffins

This is a true one-bowl situation, which I love.

Start by preheating your oven to 350°F. Line a muffin tin with liners. If you don’t have liners, grease the tin generously with melted unsalted butter so nothing sticks.

Add the bananas to a large bowl and smash them until broken down but still slightly chunky. Some banana pieces are totally fine and actually make the texture better.

Add the half-and-half, eggs, brown sugar, vanilla, cinnamon, and nutmeg. Whisk everything together until combined and smooth.

Add the brioche cubes directly into the bowl and gently toss until every piece is evenly coated in the custard. Take your time here so the bread can soak it all in.

Fold in the chocolate chips and chopped walnuts, making sure they’re evenly distributed.

Divide the mixture between the muffin liners, pressing down gently so the bread is compact and holds together while baking.

  • ⅓ cup chocolate chips
  • ⅓ cup walnuts, chopped
