These mini blueberry cottage cheese pancakes are one of my favorite breakfasts to keep in the freezer. They taste just like classic pancakes, but hold up perfectly after freezing and reheating. I portion them into small bags so breakfast is ready whenever I need it.

These mini blueberry cottage cheese pancakes came out of my constant need for a breakfast that feels like a treat but actually works for busy weeks. They taste just like regular pancakes — fluffy, tender, and comforting — but they also happen to freeze incredibly well and have a lot more protein, which makes them perfect for meal prep.

I love having breakfasts ready that don’t feel repetitive or boring, and these have become one of those recipes I make on autopilot. They’re easy, reliable, and honestly one of the best things to keep stocked in the freezer.

Why These Pancakes Work So Well for Meal Prep

What makes these pancakes special isn’t just the cottage cheese — it’s how well they hold their texture after freezing and reheating. Because the cottage cheese is fully blended into the batter, you don’t taste it at all. It just adds moisture and helps keep the pancakes soft.

I usually blend it directly in the tub using an immersion blender to keep things easy and minimize dishes. You can also transfer it to a large bowl, jar, or blender cup if you prefer — whatever’s easiest.

My favorite cottage cheese to use here is Good Culture. It blends really smoothly and has great flavor. You can use either whole milk or low‑fat cottage cheese — both work well in this recipe.

Once blended, the cottage cheese should look thick and creamy with no visible curds. This step is what makes the pancakes taste just like regular pancakes.

How to Make the Pancakes (Tips, Tricks & Variations)

Once the cottage cheese is blended, the rest of the batter comes together quickly, but a few small details make a big difference.

Start by whisking together all of the dry ingredients so the baking powder and baking soda are evenly distributed. In a separate bowl, mix the wet ingredients — egg, blended cottage cheese, milk, vanilla, and melted butter — until smooth. You can also use the lazy method I do where I whisk the dry ingredients and then just add all the wet ingredients to them and mix there.

When combining the wet and dry ingredients, gently mix just until the batter comes together. Overmixing can make pancakes dense instead of fluffy.

For the blueberries, you have two options:

  • Drop a few blueberries directly onto each pancake once the batter hits the pan (my preferred method for even distribution)
  • Or fold all the blueberries into the batter if that’s easier

Pan heat is key:

  • If the heat is too low, the batter spreads before it sets and the pancakes won’t rise properly
  • If the heat is too high, the outside browns too quickly before the inside cooks

Keep the pan at medium‑low heat and be patient. Mini pancakes cook best with gentle heat.

Portioning tips:

  • Use a small scoop for even sizing
  • Or transfer the batter to a piping bag for the most control and uniform pancakes

Cook the pancakes for about 1½ to 2 minutes per side, until bubbles form, the edges look set, and both sides are golden.

How I Portion and Cook Mini Pancakes

I always make these as mini pancakes because they cook more evenly and are much easier to store and reheat.

After mixing the batter, I scoop small amounts onto a nonstick skillet over medium-low heat. You can use a small scoop, but I love transferring the batter to a piping bag for more control and even sizing.

Instead of folding all the blueberries into the batter, I usually drop a few blueberries directly onto each pancake once it hits the pan. This gives better distribution and prevents the batter from turning purple. That said, folding them all in works too if that’s easier. Also, smaller blueberries work best for mini pancakes but if yours are huge, you can cut them in half.

Heat really matters here:

  • If the heat is too low, the batter spreads before it sets and the pancakes won’t rise
  • If the heat is too high, the outside browns too quickly before the inside cooks

Medium-low heat gives you evenly cooked, fluffy pancakes with a golden finish.

My Freezer Method (This Is Key)

Once the pancakes are cooked, let them cool completely. From there, I portion them into small freezer-safe bags with about 5 to 6 mini pancakes per bag. This makes it so easy to grab exactly what you need without defrosting a huge batch.

To freeze:

  • Let pancakes cool fully
  • Portion 5–6 pancakes per bag
  • Press out excess air
  • Store flat in the freezer

They’ll keep well frozen and reheat beautifully.

How I Reheat Them

You can reheat these pancakes straight from frozen.

  • Microwave: Microwave for about 45 seconds to 1 minute or until warmed through
  • Toaster: Toast until heated for slightly crisp edges

They’re perfect on their own, with maple syrup, or paired with fruit or yogurt.

When I Make These

I make these pancakes year-round, but they’re especially helpful during busy weeks when mornings feel rushed. Having something homemade and comforting ready to go makes mornings so much easier.

Ingredients

  • 2 tablespoons unsalted butter, melted
  • 1 cup blueberries
  • Oil spray, for cooking
