The Marinade

Preparing the Skewers

Bake the skewers for 20-25 minutes, flipping them halfway through for even cooking. For an extra charred finish, broil them for 1-2 minutes at the end.
BBQ Instructions:
If you prefer grilling, heat your BBQ to medium-high. Brush the grill grates with some oil to keep the skewers from sticking. Grill the skewers for 10-12 minutes, turning them every few minutes until the chicken is cooked through and nicely charred.

Ingredients
- 1.5 pounds chicken thighs, cut into bite-sized pieces
- 4 tablespoons light brown sugar
- 1/4 cup gochujang paste
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon finely minced garlic
- 1 teaspoon ginger paste
- 1 teaspoon smoked paprika
- 1/2 teaspoon gochugaru, optional
- 3 tablespoons low-sodium soy sauce
- 3/4 teaspoon salt, or more to taste
Instructions
- In a large bowl, whisk together the gochujang, brown sugar, sesame oil, rice vinegar, garlic, ginger paste, smoked paprika, gochugaru, soy sauce, and salt until smooth and well combined.
- Add the chicken thigh pieces and mix well until fully coated in the marinade. If you have time, let it sit for 1 hour in the fridge—but you can also cook it right away.
- Thread the chicken onto skewers, packing the pieces snugly but not too tightly.
- Preheat the air fryer to 400°F. Lightly grease the basket or tray, then arrange the skewers in a single layer, working in batches if needed.
- Air fry for 12 to 15 minutes, flipping halfway through, until the chicken is cooked through and caramelized on the edges.
- Serve warm with steamed rice, a sprinkle of sesame seeds, and sliced green onions if desired.







I just made this today. It was delicious! My siblings and I all gobbled it up. I used drumsticks instead and didn’t cut them but the recipe still worked perfectly, just adjusted cooking time based on that. If you don’t have low sodium soy sauce like me, for me, skipping the salt and reducing the soy sauce to 1 tbsp worked. I’m not an experienced cook so it took me over an hour, but I would make this again.
