The Honey Harissa Glaze

A while ago, I posted a recipe to the blog for Honey Harissa Chicken inspired by Cava and it’s been so popular that we had to do a salmon version! We are going to start off by making a honey harissa sauce/glaze. Now this is absolutely delicious as a glaze for the salmon but it can be enjoyed in so many different ways like tossing fried chicken in it. Here are the ingredients you need:

  • honey
  • harissa
  • finely minced garlic
  • unsalted butter
  • lemon juice
  • water
  • salt (to taste)
  • black pepper (to taste)
  • cornstarch mixed with water

In a saucepan over medium heat, combine the honey, harissa paste, minced garlic, butter, lemon juice, and water. Stir everything together well, allowing the flavors to mingle as the mixture simmers for about 5 minutes. Taste and adjust the seasoning with salt and black pepper to suit your taste preferences. To thicken the glaze, create a slurry by mixing cornstarch with water and adding it to the saucepan, stirring continuously until the sauce reaches your desired thickness. Once ready, remove the glaze from the heat and set it aside. This tantalizingly sweet and spicy sauce is now ready to transform your salmon into a culinary masterpiece.

Cooking The Salmon

Let’s get into cooking the salmon now! This recipe is made for the air fryer but you could also do this in the oven or seared in a pan on the stove. However you make it, it will be delicious so pick your method.

Preparation: Start by patting dry the salmon fillets with paper towels to remove any excess moisture. This helps ensure that the seasoning sticks well and promotes a crispy exterior when cooking. I like to use thin and long filets but feel free to use any kind you like.

Seasoning: In a small bowl, mix together olive oil with chili powder, paprika, coriander, cumin, salt, and black pepper. Rub this seasoning mixture evenly over both sides of the salmon fillets, ensuring they are well coated. If you are lazy like me, just drizzle the oil and sprinkle each spice onto each filet instead of mixing it all together to create a marinade.

Preheat Air Fryer: Preheat your air fryer to 400°F (200°C). This ensures that it’s hot and ready to cook the salmon when you’re ready to start.

Cooking: Line the air fryer basket with parchment paper to prevent sticking. Place the seasoned salmon fillets in a single layer in the basket, making sure they are not overcrowded. Depending on the size of your air fryer, you may need to cook the salmon in batches.

Air Frying: Cook the salmon in the preheated air fryer for 7 to 8 minutes. The exact cooking time may vary depending on the thickness of the fillets and your air fryer model. Keep an eye on the salmon to prevent overcooking.

Glazing: Once the salmon is cooked through and has developed a crispy exterior, remove the basket from the air fryer. Brush the honey harissa glaze generously over the top of each fillet.

Final Cooking: Return the glazed salmon fillets to the air fryer basket and cook for an additional 2 to 3 minutes. This allows the glaze to caramelize slightly and infuse the salmon with even more flavor.

Serve: Once the salmon is cooked to your desired level of doneness and has a beautiful glaze, remove it from the air fryer. Serve the salmon hot, garnished with your favorite herbs or a squeeze of fresh lemon juice, if desired.

My favorite way to enjoy this salmon is with yellow basmati rice and packed with veggies like pickled onions, cucumbers, lettuce, and then feta cheese!

Ingredients

HONEY HARISSA GLAZE
  • 1/4 cup honey 
  • 1/4 cup harissa 
  • 1 1/2 tablespoon finely minced garlic
  • 2 tablespoons unsalted butter
  • 2 tablespoons lemon juice
  • 1/4 cup water
  • salt, to taste
  • black pepper, to taste
  • 1 teaspoon cornstarch mixed with 1 tablespoon water
SALMON
  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 1 1/2 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon coriander
  • 1 teaspoon cumin
  • 1 teaspoon salt, more to taste
  • 1/4 teaspoon black pepper

Instructions

MAKE THE HONEY HARISSA GLAZE
  1. Heat a saucepan over medium heat and add the honey, harissa, garlic, unsalted butter, lemon juice, and water.
  2. Mix together and simmer for 5 minutes. Season with salt and black pepper to taste.
  3. Combine the cornstarch with water to make the cornstarch slurry and add it in.
  4. Stir until the sauce thickens and take off the heat. Set aside.
COOK THE SALMON
  1. Preheat the air fryer to 400°F.
  2. Line the air fryer with parchment paper and lay the salmon filets on.
  3. Drizzle olive oil and the spices evenly onto each fillet.
  4. Air fry for 7 to 8 minutes.
  5. Take the salmon out of the air fryer. Brush with the honey harissa glaze and pop back in the air fryer for 2 to 3 more minutes.
  6. Remove from the oven and enjoy warm!
