Making the Caesar Dressing
First things first, we need to make our Caesar dressing. This isn’t your average store-bought dressing; we’re going homemade for that fresh, robust flavor. And if you’ve never made Caesar dressing from scratch, don’t be intimidated! It couldn’t be easier.
Start with a base of creamy mayonnaise, then add a splash of buttermilk and whole milk for that perfect creamy consistency. A squeeze of lemon juice adds a zesty kick, while Worcestershire sauce and anchovy paste give it a savory, umami depth. *Typically, I would not add whole milk to Caesar dressing but since this is being used for a dip, we want to thin it out a bit so it turns out extra creamy! You can also swap it for heavy cream for double the richness.
NOTE: If you like a bit of spice, mix in some crushed red pepper flakes or a dash of hot sauce with the dressing. For a lighter version, you can swap out the mayonnaise for Greek yogurt.
Assembling and Baking the Dip
Now that our dressing is ready, it’s time to assemble the dip. Start by shredding a rotisserie chicken into bite-sized pieces. A whole rotisserie chicken will give us about 1 pound or 16 ounces of shredded chicken. You can always boil and shred your own chicken but using rotisserie will save you so much time and it’ll add an incredible depth of flavor. Mix the shredded chicken with your homemade Caesar dressing until every piece is perfectly coated. Transfer the mixture to an oven-safe dish, and now comes the fun part: the cheese. Sprinkle a generous amount of shredded mozzarella and cheddar over the top. Feel free to use only Mozzarella cheese or you can opt for something else like Monterey Jack. These cheeses melt beautifully and create that irresistible bubbly, golden layer we’re after.
Preheat your oven’s broiler and pop the dish in. Keep a close eye on it—broiling happens fast! You’re looking for a bubbly, golden-brown top, which usually takes just a few minutes. Once it’s beautifully melted and browned, take it out and let it cool slightly.
Here’s where we take our Caesar Salad Dip to the next level. Top the warm, cheesy dip with freshly chopped romaine lettuce for that signature Caesar crunch. Sprinkle on lots of crushed croutons for added texture and a bit more grated parmesan because you can never have too much cheese. If you’re feeling extra indulgent, add a sprinkle of crispy, chopped bacon. Finally, drizzle a little extra Caesar dressing over the top to tie everything together.
MAKE AHEAD TIP: You can prepare the dip in advance and keep it in the fridge until you’re ready to broil. Just bring it to room temperature before baking in the oven.

Caesar Salad Dip
Ingredients
- 16 ounces shredded rotisserie chicken
- 1 cup mayonnaise
- 1/4 cup buttermilk
- 1/4 cup whole milk
- 1 tablespoon lemon juice
- 1/2 tablespoon Worcestershire sauce
- 2 teaspoons minced garlic
- 2 teaspoons yellow mustard
- 1 teaspoon anchovy paste
- 1 teaspoon dried parsley
- 1/2 teaspoon black pepper
- 1/2 cup parmesan, freshly grated
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 1 teaspoon Italian seasoning, optional
- 1 cup thinly chopped romaine lettuce
- 1/2 cup croutons, crushed
- 1/4 cup grated parmesan
- 1/2 cup chopped cooked bacon, optional
Instructions
DRESSING:
- In a medium bowl, whisk together the mayonnaise, buttermilk, whole milk, lemon juice, Worcestershire sauce, minced garlic, yellow mustard, anchovy paste, dried parsley, black pepper, and freshly grated parmesan cheese until smooth and well-combined.
- In a large mixing bowl, add the shredded rotisserie chicken.
- Pour the homemade Caesar dressing over the chicken and mix until the chicken is thoroughly coated with the dressing.
ASSEMBLY AND BAKING:
- Preheat your oven’s broiler.
- Transfer the chicken and dressing mixture to an oven-safe baking dish.
- Sprinkle the shredded mozzarella cheese and cheddar cheese evenly over the top of the chicken mixture. Add a dash of Italian seasoning evenly across the top.
- Place the baking dish under the broiler and broil until the cheese is melted and bubbly, about 3-5 minutes. Keep a close eye on it to prevent burning.
SERVING:
- Remove the dish from the oven and let it cool slightly.
- Top the broiled dip with the thinly chopped romaine lettuce, crushed croutons, grated parmesan cheese, and chopped cooked bacon if using.
- Drizzle extra Caesar dressing over the top if desired.
