Crazy Feta Dip – CAVA Copycat

I’m obsessed with CAVA and when I tell you I go CRAZY for their crazy feta dip, I’m not lying! I now understand why they gave it that name. It has so much flavor and it is truly unlike anything I’ve ever had. It’s a bit spicy from the jalapenos, sweet from the roasted onions and garlic, and tangy from the feta and lemon. It truly is perfection and now you can make it at home!

Roasting the Veggies

What really takes this dip to the next level is the depth of flavor that develops when you roast the veggies! Here is a list of everything to roast in the oven:

  • jalapenos
  • yellow onion
  • garlic

Preheat the oven to 400°F. Slice the head of the garlic off to expose all the cloves and generously drizzle with olive oil all over. Wrap tightly with nonstick foil with the exposed head side up. If you are not using nonstick foil, first wrap it in parchment paper and then in foil.

For the jalapenos, just slice them in half longways to expose the seeds and stem.

For the yellow onion, just use half the onion and cut it into about 4-quarter sections.

To a baking tray, drizzle olive oil and add the jalapenos, wrapped garlic head, and onion. Drizzle with more olive oil to coat the vegetables and sprinkle a bit of sea salt and black pepper.

Pop the tray in the oven and set the timer to 15 minutes. After 15 minutes, check on the jalapenos. If they have a nice jar to them and are soft to the touch, take them off the tray and out of the oven. If not, flip them over and let them roast for 5 more minutes. Also at the 15-minute mark, move around the onions so they evenly roast.

At the 30-minute mark, take out the onions if they’re golden, caramelized, and soft.

At the 30 to 40-minute mark, take out the head of garlic. Unwrap and allow to cool for 10 minutes. After 10 minutes, squeeze out the cloves. It’ll have a sweet smell to it and be super soft and golden in color.

Chop the jalapenos into small pieces as well as the roasted onion and set side aside.

Whipping the Feta

Once the veggies are roasted, chopped, and ready to go, it’s time to whip the feta! You’ll need a food processor or blender. Either works fine.

Just add two whole blocks of feta that have been broken up along with olive oil, lemon juice, lemon zest, salt, roasted garlic, and plain whole milk yogurt. Blend together until a bit smooth and creamy. It’s okay if it appears a bit clumpy, that’s how Cava’s looks as well. If you prefer it not to look like that, add more olive oil or plain whole milk yogurt to get it very smooth and fluffy.

Transfer to a bowl and add the chopped jalapenos and onions. Mix together and serve!

What to Serve it With

There are so many ways to enjoy the dip! My favorite way is as a dip with these Cava Copycat Pita Chips.

You can also enjoy it in a rice bowl with yellow rice and harissa honey chicken or spicy lamb meatballs.

If you want to make it as a sandwich or wrap, you could use it as a spread for a punch of flavor!

Another option is to add it to a salad, the possibilities are endless.

Ingredients

  • 16 ounces feta (2 blocks)
  • 2 to 3 tablespoons olive oil
  • juice of 1/2 a lemon
  • zest of 1/2 a lemon
  • salt, to taste
  • black pepper, to taste
  • 2 tablespoons plain yoghurt
ROASTED VEGGIES
  • 2 jalapenos, cut in half and roasted
  • 1/2 yellow onion, cut into chunks roasted
  • 1 bulb of garlic, roasted
  • 2 tablespoons olive oil
  • salt, to taste
  • black pepper, to taste

Instructions

  1. Preheat oven to 400°F.
  2. Cut the head of the garlic bulb off and drizzle with 2 teaspoons of the oil. Cover and wrap tightly in foil.
  3. To a sheet pan, add the wrapped garlic along with jalapenos (cut in half) and onions. Drizzle the jalapenos and onions with the remaining oil.
  4. Pop in the oven to roast. After 15 to 20 minutes, check on the jalapenos. If softened and darker in color, remove from the oven to cool. Let the onions and garlic continue roasting. After 10 more minutes, the onions and garlic should both be done. The onions will be golden and have some char marks. The garlic will be golden and completely soft.
  5. Allow the vegetables to cool and then finely dice the roasted jalapenos and onions. Mash the garlic as well to make a paste.
  6. To a food processor, add the feta, olive oil, lemon juice, lemon zest, salt, black pepper, and roasted garlic.
  7. Puree until you have the consistency of a very thick spread with small chunks.
  8. Transfer to a bowl and add the plain yoghurt, diced onion, and jalapeno. Mix together well.
  9. Serve with pita chips to enjoy!
