Did you know you can take packaged brownie mix and turn into a delicious smores fusion dessert? Nobody will ever guess you didn’t even make the brownies from scratch after the first bite. Easy, delicious, and fun to make!

The Brownie Base

Making the brownie base is the easiest step in this recipe because we’ll be using prepackaged brownie mix. My favorite to use is any of the Ghirardelli boxes. Just follow the directions on the back of the box for making the batter but instead of water, use the same exact amount of whole milk. This is how I always make my brownies and it makes all the difference! Make sure to use a rubber spatula to combine the ingredients and the final consistency should be a thick batter. Set aside for now!

The Crust

Since this recipe is a fusion of smores and brownies, we’re going to use the graham crackers to give the brownies a crust! Just add honey graham crackers to a food processor and blend until the texture is like sand.

Transfer the graham crackers to a bowl and add melted unsalted butter. Combine together and you’ll know it’s good to go when it holds its shape when you press it together.

Get a nonstick cupcake tray and add about 1 to 2 tablespoons of the graham cracker mixture to each cup. If you do not have a non-stick tray, just use a little bit of oil spray or you can also use cupcake liners.

Press down the graham cracker mix really well so it’s tightly packed and formed into a crust. Add a scoop of brownie batter into each cup, about 1/4 cup. Each cup should be 2/3 of the way filled up.

Baking and Assembling

Now that we’ve assembled each cup, pop the tray in the oven to bake at 350°F for 12 to 15 minutes until the brownies are crackly on top. Do not overcook the brownies, you want them to still be fudgy in the center.

Once they’re out of the oven, let them cool for 10 minutes. Then it should be super easy to rotate the brownies and pop them out of the tray easily. Use the bottom of a muddler, a spoon, or even your finger to make an indent in the center of each cup. Add a few mini marshmallows in the center or even one large marshmallow. Use a blow torch to toast the marshmallows on top. If you want to take these to the next level, add a drizzle of hot fudge sauce on top and a sprinkle of crumbled graham crackers. If you like them less sweet, skip this step.

Now just enjoy them warm for the best smores you’ll ever have!

Ingredients

  • 18 ounce package brownie mix (I used Ghirardelli)
  • 1/3 cup vegetable oil
  • 1/4 cup whole milk
  • 1 large egg
  • 1  cup crumbled graham crackers
  • 5 tablespoons unsalted butter, melted
  • 1 1/2 cup mini marshmallows
  • hot fudge sauce, optional

Instructions

  1. Preheat oven to 350°F.
  2. Prepare the brownie batter according to package directions but instead of water, substitute with equal parts whole milk. Add the milk, egg, and vegetable oil to the brownie mix and use a rubber spatula to incorporate until you have a thick batter consistency.
  3. To a food processor, add the graham crackers and blend until you have a sand-like consistency. Transfer to a bowl, add the melted butter, and mix together well.
  4. Using a non-stick cupcake tray, add 1 to 2 tablespoons of the graham cracker mix to each cup. Press down well to form a crust.
  5. Add a dollop of brownie batter on top so each cup is now around 2/3 full to the top.
  6. Transfer to the oven and bake for 12 to 15 minutes until the brownies are set in the middle.
  7. Use a spoon or any small round surface like your finger to make a small indent in the center.
  8. Add a few mini marshmallows in the center and use a torch to toast them.
  9. Optional, add a drizzle of hot fudge sauce on top and a sprinkle of graham cracker crumbles to enjoy!
Tips & Notes
If you are not using the Ghirardelli Double Chocolate brownie mix, do not use the same measurements for the oil, milk, and eggs. Use whatever the package directions say in the back of the box.
