No-Bake Biscoff Truffles
2 words. 1 delicious dessert. No baking involved. These four ingredient Biscoff Truffles are not only incredibly easy to make but they’re also to die for! The gingerbread taste of the biscoff cookies balances the sweetness of the white chocolate perfectly and they’re so much easier than making cake pops.

Now this dessert was actually one of the first I ever made when I created my TikTok back in 2020 so it is very nostalgic to me. I absolutely love Biscoff cookies – they’re my favorite! To this day, whenever my dad comes home from a trip, he’ll save and bring back the Biscoff cookies they give him on the airplane for me. I’m not much of an Oreo gal so I thought why not take the very popular no-bake Oreo truffles and make a biscoff version of it. And then this recipe was born! Let’s make it.
How to Make the Truffles
The recipe is super simple and does not require many ingredients!
Here are the 4 ingredients you need:
- biscoff cookies
- cream cheese
- biscoff spread
- white chocolate
The first step is to add the Biscoff cookies to a food processor and blend them completely until it’s like sand. If you don’t have a food processor, just toss the Biscoff cookies into a ziplock bag, seal it tightly, and then smash and roll it using a rolling pin until broken apart and fine.

Then transfer the biscoff crumbs to a large mixing bowl. Add cream cheese that’s been softened along with biscoff spread and mix it into the crushed biscoff cookies until it resembles the consistency of cake pops.
*NOTE: If you want the truffles to be lighter in biscoff taste and sweetness, only use cream cheese in place of biscoff spread.
Now it’s time to roll and shape them into truffles! Take about 2 tablespoons of the dough and roll into a tight ball. Place on a tray lined with parchment paper. Repeat with the rest of the dough. You can also use a mini cookie scooper to portion them out.
Then you can pop them in the fridge or freezer to chill for a bit, just about 15 to 30 minutes. In the meantime, melt down some white chocolate in the microwave in 30 second intervals on 50% power, stirring in between each interval until completely smooth.

Take the truffles out of the fridge or freezer and dip each one in the white chocolate, let the excess drip off and then transfer to a tray. Optional, add a sprinkle of biscoff crumbs on top for decor and then repeat with the rest. That’s basically it!
Storing the Truffles
If you have any leftover truffles, they need to be stored in an airtight container or ziplock bag in the fridge! The cream cheese in the truffles can easily go bad if left out at room temperature so to be safe, keep them in the refrigerator at all times.

No-Bake Biscoff Truffles
Ingredients
- 32 biscoff cookies (1 package)
- 5 ounces cream cheese, softened
- 1/4 cup cookie butter
- 2 cups white chocolate
- 1/4 cup biscoff cookie crumbs, topping
Instructions
- Finely crush biscoff cookies in a food processor. If you don't have a food processor, add the cookies to a ziplock bag and use a rolling pin to crumble them up.
- Add the softened cream cheese, cookie butter, and crushed biscoff cookies to a mixing bowl and combine until you have a dough-like consistency.
- Take about 2 tablespoons of the dough and roll into balls. Repeat with the rest of dough.
- Pop in the fridge or freezer to chill for about 15 to 30 minutes or until firm.
- Melt down white chocolate in the microwave in 30 second intervals on 50% power. Mix in between each interval until completely melted and smooth.
- Dip each truffle in the chocolate so it's covered completely and use a fork to let any excess chocolate drip off. Repeat with the rest. Add biscoff cookie crumbs on top if desired as you go along.
- Once they're all covered in chocolate, pop in the fridge or freezer for a few minutes just until the chocolate hardens.
- After chilling, you can enjoy! Store any leftovers in the fridge.
Tips & Notes
- If you don't want to use white chocolate, swap it out for milk or semi-sweet chocolate for a less sweet alternative!
