If you love the apple pie from McDonald’s, you’ll love this simple copycat recipe that you can make at home and even better! The pie is super flaky and crispy while the filling is so ooey and gooey with the most delicious apple spice flavor.

With a little hack of using store-bought puff pastry instead of making pie dough from scratch, this recipe couldn’t be easier. So next time you’re craving a mini apple pie, skip the drive through and get the oven cranking! You can even enjoy it with a scoop of ice cream on top for the most incredible experience your taste buds have had.
The Apple Pie Filling
The first step and the most important of the recipe is making the apple pie filling! The perfect apple pie has two very important components:
- It needs to have the perfect balance of sweet and tart. It can’t be too sour or too sweet – just right!
- The apples need to be cooked perfectly. You don’t want the apples to be undercooked and still crunchy but you also don’t want them to be overcooked and be too mushy.
So keeping that in mind, let’s make it. Here are the ingredients you will need:
- granny smith apples
- light brown sugar
- unsalted butter
- vanilla extract
- cinnamon
- lemon juice
- salt
- cornstarch + water

To a pan over medium heat, add the butter, apples, light brown sugar, cinnamon, salt, vanilla extract, and lemon juice. Mix together and allow to simmer for 6 to 8 minutes until the apples are soft when poked with a fork. Combine the water and cornstarch in a small bowl to make the cornstarch slurry and add this to the pan. Mix together to thicken the filling and then take off the heat and transfer to a bowl.
If you don’t like Granny Smith apples, you can replace them with a different kind like golden delicious or honey crispy. However, keep in mind Granny Smith are the best to use for apple pie.
Assembly & Baking
There are two more parts to this recipe that we need for assembling the apple pies.
The first is the EGG WASH:
- Just combine together an egg and a splash of milk in a small bowl. That’s it!
The second is the CINNAMON SUGAR:
- To a small bowl, add white sugar and cinnamon and mix together. Set aside.
Now we’ll work on the puff pastry. Make sure to defrost it according to package directions. Unwrap both sheets and divide each sheet into four equal pieces.

Brush the outside edges of each piece with egg wash. Add the apple filling along one side and fold over to make a long rectangle pie shape. Press down on the edges to help seal it. Pinch the edges with a fork to seal shut tightly.
Brush the tops with egg wash and sprinkle the cinnamon sugar. Make three small cuts on the top.
Pop in the oven to bake for 20 to 25 minutes or until beautifully golden and crisp. Take out of the oven, allow to cool for 5 to 10 minutes before enjoying! They will be very hot so be careful and patient when taking that first bite.

Ingredients
PUFF PASTRY
- 1 puff pastry package, 1 pound – 2 sheets
- 1 large egg
- 1 tablespoon whole milk
APPLE PIE FILLING
- 2 large granny smith apples, peeled and cubed
- 3 tablespoons unsalted butter
- 1/3 cup light brown sugar
- 1 1/4 teaspoon cinnamon
- pinch of salt
- 1 teaspoon vanilla extract
- 1/2 tablespoon lemon juice
- 2 teaspoons cornstarch
- 1 tablespoon water
CINNAMON SUGAR
- 2 tablespoons white granulated sugar
- 1 teaspoon cinnamon
Instructions
MAKE THE EGG WASH
- Whisk together the egg and milk in a small bowl. Set aside.
PREPARE THE CINNAMON SUGAR
- To a small bowl, combine sugar and cinnamon and set aside.
MAKE THE APPLE PIE FILLING
- To a pan over medium heat, add the butter, apples, light brown sugar, cinnamon, salt, vanilla extract, and lemon juice.
- Mix together and allow to simmer on low heat for 6 to 8 minutes until the apples are soft when poked with a fork.
- Combine the water and cornstarch in a small bowl to make the cornstarch slurry and add this to the pan. Mix together to thicken the filling and then take off the heat and transfer to a bowl.
PREPARE THE PUFF PASTRY
- Preheat oven to 400°F.
- Spread the puff pastry on a baking sheet. Cut each sheet into four equal pieces.
- Brush the edges of each piece with just a bit of egg wash.
- Add the apple filling along one side and fold over. Press down on the edges to help seal it. Take a fork and press around to seal shut. Repeat with the reset.
- Brush the tops with egg wash and sprinkle with cinnamon sugar.
- Transfer to the oven and bake for 20 to 25 minutes or until golden brown.
- Enjoy warm!
