Loaded Sweet Potatoes with Spiced Beef and Hot Honey
If you’ve spent any time scrolling TikTok recently, you’ve probably stumbled on that viral sweet potato bowl — the one that sounds way too simple to be good, but ends up totally addictive. It’s just sweet potatoes, cottage cheese, honey, ground beef, and avocado. Plain, right? But honestly, it’s the perfect balance of flavors and textures that keeps me coming back again and again.

Inspired by that bowl, I decided to give it a little twist and turn it into a fully loaded stuffed sweet potato dinner. It’s cozy and comforting, something you can dig into with a fork and knife, warm and satisfying. This recipe has the tangy, creamy bite of cottage cheese, the buttery smoothness of ripe avocado, the rich, spiced savory beef, and that signature hot honey drizzle to tie everything together with a little sweet heat. Every bite is creamy, sweet, savory, spicy, and I have to say it again but comforting.
What makes this so great (and why I make it over and over) is how balanced and wholesome it feels. You get protein, carbs, and healthy fats all in one dish, and it’s naturally gluten-free (just leave out the Worcestershire sauce to make it fully GF). Plus, it’s totally customizable — you can swap out the sweet potato for different varieties or even regular potatoes if you prefer. The flavors in this bowl pair so well with the natural sweetness of the potatoes, but they hold up beautifully on more neutral potatoes too.
How to Cook the Sweet Potatoes
The sweet potatoes are the star here, so getting them just right is key. You’ve got two great methods depending on what equipment you have and how much time you want to spend.
If you have an air fryer, I highly recommend it. The potatoes cook faster and you get a beautiful slightly caramelized skin that’s a perfect contrast to the soft, fluffy inside. Preheat your air fryer to about 375-400°F and cook the potatoes for around 35 to 45 minutes, flipping them halfway through so they cook evenly on all sides. The cooking time will depend on the size of your potatoes, so smaller ones will finish faster and larger ones might take a bit longer. Always poke the potatoes several times with a fork or sharp knife before cooking — this lets steam escape and helps them cook evenly without bursting.
If you don’t have an air fryer, the oven works just as well. Set it to 400°F and place the potatoes directly on the rack or on a baking sheet. Roast for 45 to 50 minutes, flipping once about halfway through. You’re looking for tender potatoes that easily yield when pierced with a fork, and with slightly wrinkled, crispy skin and sweet caramelized juices oozing out. The air fryer will give you slightly faster results with a little more crisp on the skin, but the oven gives you the same soft, creamy inside.
Once your sweet potatoes are cooked, set them aside to cool just a bit so you can handle them without burning your fingers. Then slice them lengthwise, but don’t cut all the way through — you want to keep the base intact to hold all the delicious toppings. Don’t cut them until you are ready to assemble them so they stay hot! Use a fork to gently fluff and mash the inside, mixing in a little butter, salt, and black pepper for flavor and creaminess.
Making the Spiced Beef
While your sweet potatoes are cooking, get started on the ground beef. Heat a bit of olive or avocado oil in a skillet over medium heat, then add the beef. Use a spatula or wooden spoon to break it up into small crumbles as it cooks.
As the beef starts to brown and release its juices, add minced garlic and your warming spices — I like smoked or regular paprika for depth, chili powder for extra flavor, plus onion powder, salt and pepper to taste. Stir everything together and let the beef brown fully, stirring occasionally to keep it cooking evenly.
Once browned, splash in Worcestershire sauce, a bit of cornstarch, and beef broth. This keeps the beef moist and adds a nice saucy texture to the filling. Let it simmer for another minute so the ground beef is saucy all over.
TIP: I like to do this step when the sweet potatoes have a little less than 10 minutes left in the oven or air fryer so everything is ready at the same time and can be served hot and fresh!
The Hot Honey Drizzle
Hot honey has become one of my favorite ingredients in the kitchen. It’s simple but adds so much complexity to basic dishes like this one. The sweetness of honey combined with a little spicy heat from crushed red pepper flakes and/or chili sauce creates a perfect balance that plays off the savory beef and creamy toppings beautifully.
To make your own, add some honey to a small bowl and stir in red pepper flakes, sriracha, and a splash of vinegar for some tang. You can make this ahead and store it in a jar for a few weeks, then drizzle it on just about everything — eggs, cheese, roasted veggies, you name it.
If you’re short on time or just want to keep things easy, store-bought hot honey works just as well and saves you the effort. If you don’t like spicy, just use regular honey like the viral trend.
Assembling Your Loaded Sweet Potatoes
Now for the fun part: putting it all together. Grab your cooked sweet potatoes and slice them open lengthwise, careful not to slice all the way through so the potato holds together like a little boat.
Fluff the insides with a fork, mixing in a little butter, salt, and black to taste to make it creamy and flavorful. Then pile on the spiced beef, letting the savory, spiced juices soak into the potato.
Add a big spoonful of tangy cottage cheese — it adds a lovely creaminess and a little brightness that cuts through the richness. Layer on slices or dollops of ripe avocado for buttery texture and healthy fats.
Finally, drizzle your hot honey generously over the top for that sweet, spicy finish. If you want, add some extra toppings like sliced scallions, red onion, chives, whatever you love.
Storing Leftovers & Making It Ahead
This recipe is great for meal prep or leftovers because each component stores really well on its own. You can cook your sweet potatoes ahead of time and keep them whole in the fridge for up to four days. When you want to eat them, just reheat in the microwave or pop them in the air fryer for a few minutes to warm up and crisp the skin again.
The spiced beef can be cooked a day or two in advance and stored in an airtight container in the fridge for three to four days. It also freezes beautifully if you want to make a big batch and save some for later.
For the best texture and freshness, keep the cottage cheese and avocado separate until you’re ready to assemble. Avocado can brown quickly, so slice or mash it fresh each time. Store-bought or homemade hot honey keeps well in a sealed jar at room temperature or in the fridge.
When you’re ready to eat, reheat the sweet potatoes and beef, then build your loaded potato fresh. This way, every bite tastes just as vibrant and delicious as when you first made it.

Ingredients
SWEET POTATOES- 4 medium sweet potatoes
- Olive or avocado oil, for rubbing
- Salt and pepper, to taste
- Butter, for serving
- 1 pound ground beef
- 1 tablespoon olive or avocado oil
- 1 teaspoon minced garlic
- 1/2 teaspoon onion powder
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 tablespoon Worcestershire sauce
- 1 teaspoon cornstarch
- 1/4 cup beef broth
- 1/4 cup hot honey
- 1 tablespoon sriracha
- 1/2 to 1 teaspoon red pepper flakes, to taste
- 1/2 tablespoon vinegar (white or apple cider)
- cottage cheese, as needed
- 1 avocado, thinly sliced or mashed
Instructions
ROAST THE SWEET POTATOES
- Wash and dry the sweet potatoes.
- Carefully pierce each sweet potato several times with a fork or sharp knife (cuts don’t need to be deep).
- Rub each potato with oil and season with salt and pepper.
- Air fry at 400°F for 45 to 50 minutes, flipping them after 30 minutes, until fork-tender and skins are crisp.
COOK THE GROUND BEEF (make while potatoes are roasting)
- Heat oil in a skillet over medium heat.
- Add minced garlic and sauté for 30 seconds until fragrant.
- Add ground beef, breaking it up with a spatula, and cook for 6 to 8 minutes until browned.
- Stir in onion powder, chili powder, paprika, salt, black pepper, Worcestershire sauce, and cornstarch.
- Pour in beef broth and simmer for 3 to 5 minutes until the sauce thickens and coats the meat.
MAKE THE HOT HONEY (make while potatoes are roasting)
- In a small bowl, whisk together hot honey, sriracha, red pepper flakes, and vinegar. Set aside.
ASSEMBLY
- Carefully slice open each sweet potato.
- Add a pat of butter, season with salt and pepper, then mash and fluff the flesh with a fork so the butter melts in and the texture is creamy.
- Top each potato with a scoop of ground beef.
- Add a generous spoonful of cottage cheese.
- Finish with sliced or mashed avocado.
- Drizzle with hot honey and serve warm.

Q: What kind of sweet potatoes can I use?
A: Orange-fleshed sweet potatoes are the best — they’re creamy, sweet, and pair perfectly with the flavors here. But you can also use Japanese sweet potatoes for something starchier, or even regular russet potatoes if you’re not into sweet potatoes. The toppings still hit just right.
