Jalapeño Cheddar Tuna Melt

The Tuna Filling

One thing I really REALLY love about this recipe is that you can meal prep it ahead of time and then just assemble and bake tuna melts throughout the week whenever you want. It’s like half-meal prep because you’re not making the whole tuna melt, you’re just prepping the filling. That way the tuna melt tastes fresh and delicious every single day. The filling takes 5 minutes to make, here’s everything you need:

  • canned solid white albacore tuna, drained
  • mayonaisse
  • yellow mustard
  • salt
  • black pepper
  • red pepper flakes
  • green or red onion
  • yellow sweet corn
  • chopped parsley

Just add all the ingredients above and mix all together. Feel free to tweak the flavors or any vegetables to your liking! I love to also add chopped sweet and spicy pickled jalapeños to the mix. If you like celery, add some chopped celery. Make it you! You can keep this filling in an air-tight container in the fridge for 2 to 3 days. There are many ways to enjoy it beyond a tuna melt. You can eat it as a dip with crackers. You could add it on top of romaine or butter lettuce to make lettuce cups. Get creative! Now that the filling is prepped, it’s time to bake.

Assembling and Baking

Let’s talk about the break! You could use any kind of bread you like for this recipe, just pick your favorite. Anything that toasts up nicely will work well for a tuna melt. Some options I’d recommend are sourdough, sliced wheat bread, and my personal favorite, a bagel!

Once you have your sliced bread, add a layer of the tuna filling all across. Sprinkle sharp cheddar cheese on top and sliced jalapeños since this is a jalapeño cheddar tuna melt after all. Pop in the oven or air fryer at 400°F for 7 to 9 minutes. The timing will vary depending on your air fryer or oven so just monitor it. You want the bread to be toasted and crispy with the cheese melted on top. I like the cheese to be toasted and crispy as well so I turn it to broil after just for 2 to 3 minutes and that’s it!

Enjoy warm with some fresh veggies or potato chips on the side to enjoy!

Ingredients

  • 12-ounce can solid white albacore tuna, water drained
  • 1/3 cup mayonnaise
  • 1/4 cup green onions, thinly sliced
  • 3 to 4 tablespoons sweet yellow corn
  • 1/2 teaspoon salt, more to taste
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon yellow mustard
  • 1 tablespoon chopped parsley
  • 1 cup shredded sharp cheddar
  • 1 jalapeño, thinly sliced
  • 4 to 5 slices bread of choice

Instructions

  1. Preheat the oven or air fryer to 400°F.
  2. To a bowl, add the tuna, mayo, green onion, corn, black pepper, salt, red pepper flakes, yellow mustard, and parsley. Mix together well.
  3. Add the tuna mix on top of the sliced bread. Top with shredded cheddar cheese and 3 to 4 slices of jalapeños.
  4. Pop in the air fryer or oven for 7 to 9 minutes until the cheese is golden and bubbly on top and the bread is crispy. Broil on top for an additional 2 to 3 minutes if needed.
  5. Take out of the oven and enjoy warm!

This was so easy to make and one of the best tuna melt recipes i’ve had. I’ve been hyperfixated on this for the last week. I’ve been struggling to get protein in and this has been a lifesaver.

I absolutely loved this recipe, this recipe takes the humble tuna in a can and transforms it into one of the best things we’ve ever eaten.
It was so easy to prepare ahead and it was even easier to bake in the oven which is hassle-free. apart from that, this recipe is a great meal that helps with protein intake.
