Crunch Date Bark
Inspired by the classic Crunch chocolate bar, this date bark has that same crispy chocolate snap we all grew up loving — but layered over soft, caramel-like Medjool dates. Crunch bars were such a big part of my childhood, especially Buncha Crunch at the movie theater. There was just something about that crispy chocolate that made it elite… but let’s be honest, they don’t hit quite the same as an adult. So I had to make a date bark version that gives that same nostalgic crunch, but with better ingredients and extra fiber from the quinoa.

It’s chewy, crispy, chocolatey, and honestly so satisfying straight from the fridge. And when you slice it into clean rectangles? It really feels like you made your own chocolate bar at home. Let’s get into it.
How to Puff Quinoa (The Right Way)
We’re not slowly toasting it here — we’re popping it. Think like mini popcorn.
Start by rinsing the quinoa really well in a fine mesh strainer. Rub it between your fingers under running water to remove its natural coating (this prevents bitterness). Then spread it out on a clean kitchen towel and let it dry completely.
This part matters more than you think:
- If there’s moisture left, it will steam
- It won’t pop properly
- And it won’t get crisp
I like to put it in the oven where it’s turned off but the light is on and the warmth from the light bulb helps it dry up faster.
Once completely dry, heat a large skillet over medium-high until fully hot. Don’t add the quinoa yet — let the pan heat first.
Add just 1–2 tablespoons at a time in a thin layer. No overcrowding. Within about 10–20 seconds, you’ll hear tiny popping sounds. Stir or shake constantly. The grains will slightly expand and turn lighter in color.
Each batch takes only:
- 30–60 seconds total
- Remove it as soon as popping slows
If you leave it too long, it can turn bitter. Transfer to a plate to cool and repeat in small batches.
Assembling the Date Bark
Line a small baking sheet with parchment paper. Slice your Medjool dates open and remove the pits if needed. Lay them side by side — not overlapping — so they form a tight rectangle.
Place another sheet of parchment on top and press down firmly with the bottom of a mug or glass until flattened into one even layer. Remove the top parchment.
Now melt your milk chocolate in the microwave on low power. Heat in 20–30 second intervals, stirring well between each round. Low power keeps it smooth and glossy. You can also use semi-sweet or dark chocolate.
Once melted, stir the cooled puffed quinoa directly into the chocolate until evenly combined. Pour the chocolate mixture over the flattened dates and spread evenly to the edges. Sprinkle with flaky sea salt if you love that sweet-salty contrast. Refrigerate for 30–45 minutes until fully set. Once firm, use a sharp knife to cut into rectangular pieces.
TIPS FOR THE BEST TEXTURE
- Make sure quinoa is completely dry before popping
- Pan must be fully preheated
- Work in very small batches
- Let quinoa cool before mixing into chocolate
- Let the bark sit out a few minutes before eating for the best chewy-crunch bite
VARIATIONS
You can easily switch this up depending on what you have:
- Swap milk chocolate for dark chocolate for a deeper flavor
- Add chopped pistachios or almonds for extra crunch
- Add a thin layer of peanut butter under the chocolate
What Can I Use Instead of Popping My Own Quinoa?
Totally fair if you don’t want to puff it yourself.
Here are easy swaps:
- Pre-puffed quinoa – Just make sure it’s fresh and crisp
- Puffed or crisped rice – Gives that classic Crunch bar texture
- Crispy rice cereal – Works in a pinch and still delivers crunch
All of these can be stirred straight into the melted chocolate before spreading.
Storage
Store in an airtight container in the refrigerator for up to one week. I like pulling it out a few minutes before eating so the chocolate softens slightly and the dates get extra chewy.

- Add 1 to 2 tablespoons of quinoa at a time in a very thin single layer. Do not overcrowd the pan.
- Stir or shake the pan constantly. Within 10–20 seconds, the quinoa should begin making tiny popping sounds. The grains will slightly expand, turn lighter in color, and become crisp.
- Cook each batch for about 30–60 seconds total, just until popping slows. Do not leave it longer or it can taste bitter.
- Immediately transfer the puffed quinoa to a plate to cool completely. Repeat with remaining quinoa in small batches.
ASSEMBLY
- Line a small baking sheet with parchment paper. Slice the Medjool dates open lengthwise and remove the pits if needed. Arrange them side by side on the parchment without overlapping.
- Place another sheet of parchment paper on top of the dates and press down firmly with the bottom of a mug or glass to flatten them into one even layer. Remove the top parchment sheet.
- Add the milk chocolate to a microwave-safe bowl. Microwave on low power in 20–30 second intervals, stirring well between each round, until smooth and fully melted. Heating on low power prevents the chocolate from scorching or seizing.
- Stir the cooled puffed quinoa directly into the melted chocolate until evenly combined.
- Pour the chocolate-quinoa mixture over the flattened dates and spread evenly to the edges with a spatula. Sprinkle with flaky sea salt if desired.
- Transfer to the refrigerator and chill for 30–45 minutes, or until fully set.
