PUFFED QUINOA
Place the quinoa in a fine mesh strainer and rinse thoroughly under cold water for 30–60 seconds, rubbing it between your fingers to remove its natural coating.
Shake off excess water, then spread the quinoa in a thin layer on a clean kitchen towel or paper towels. Let it dry completely. Any moisture will prevent it from puffing properly.
Heat a large dry skillet over medium-high heat until fully hot. The pan must be properly preheated before adding quinoa.
Add 1 to 2 tablespoons of quinoa at a time in a very thin single layer. Do not overcrowd the pan.
Stir or shake the pan constantly. Within 10–20 seconds, the quinoa should begin making tiny popping sounds. The grains will slightly expand, turn lighter in color, and become crisp.
Cook each batch for about 30–60 seconds total, just until popping slows. Do not leave it longer or it can taste bitter.
Immediately transfer the puffed quinoa to a plate to cool completely. Repeat with remaining quinoa in small batches.
ASSEMBLY
Line a small baking sheet with parchment paper. Slice the Medjool dates open lengthwise and remove the pits if needed. Arrange them side by side on the parchment without overlapping.
Place another sheet of parchment paper on top of the dates and press down firmly with the bottom of a mug or glass to flatten them into one even layer. Remove the top parchment sheet.
Add the milk chocolate to a microwave-safe bowl. Microwave on low power in 20–30 second intervals, stirring well between each round, until smooth and fully melted. Heating on low power prevents the chocolate from scorching or seizing.
Stir the cooled puffed quinoa directly into the melted chocolate until evenly combined.
Pour the chocolate-quinoa mixture over the flattened dates and spread evenly to the edges with a spatula. Sprinkle with flaky sea salt if desired.
Transfer to the refrigerator and chill for 30–45 minutes, or until fully set.
Once firm, use a sharp knife to cut into rectangular pieces. Store in an airtight container in the refrigerator for up to 1 week.
