Croissant Freezer Breakfast Sandwiches
Always running late in the morning or want to save some dishes every day? Meal prep these breakfast sandwiches packed with smoked beef bacon and gouda cheese on a fluffy and crispy croissant roll. This Starbucks copycat recipe tastes so much better at home and because it’s freezer-friendly, breakfast takes only a minute to make now!

MAKING THE EGGS
My favorite type of eggs EVER are scrambled eggs, they are the best in my opinion! French-style eggs are so creamy and fluffy and I’m going to show you how to make them. It’s actually very easy to make but you just have to follow these next few tips to make sure nothing goes wrong.
- low and slow – cook over low heat
- stir constantly – this breaks down the curds so they’re soft
- butter or oil – butter tastes better but anything that adds fat and prevents sticking
- do not overcook! – they need to glisten
In a bowl, whisk together eggs with salt and a sprinkle of black pepper until combined well. Add butter or oil over low heat to a pan. Immediately add the eggs in before letting the butter or oil get hot. Continuously stir with a rubber spatula as the eggs cook. They are done right when they are set but do not overcook. They will look a little wet still but will have shape. Immediately take off the heat and transfer to a plate. And that’s it!
This step is optional but I like to cut up some cheddar cheese slices or add shredded cheese into the scrambled eggs as they cook so they basically melt in and become one with the eggs. It creates a beautiful rich color and taste too!
NOTE: This recipe does call for scrambled eggs but you can feel free to prepare them as you see fit whether it’s a fried-egg or boiled egg or just regular scrambled eggs!
ASSEMBLING THE SANDWICHES
Now that eggs are prepped, we can assemble the sandwiches! Take the croissant rolls or bread of your choice and make sure to toast them. I just cut them in half, buttered it up, and popped them in the oven at 350°F for a few minutes until toasted and crispy around the edges.
Once the bread is beautifully golden, we can stack each sandwich up with the eggs, cheese, and beef bacon. I just cook my beef bacon on the pan over the stove with a little brown sugar. You can also cook it in the oven if you’d like. Then for the cheese, I used smoked gouda but you can use cheddar cheese or American cheese. And that’s all we’re going to add. Since these sandwiches are going into the freezer, you don’t want to add anything that will get funky when you microwave it. For example, if you love avocado or sauce like mayo, I would add it after reheating it up.
FREEZING AND REHEATING
These sandwiches can stay in the freezer for up to 3 to 4 months. Whenever you want to enjoy one, just pop it in the microwave while it’s still wrapped in sandwich paper. Microwave for 90 seconds until fully cooked and hot. The cheese should be ooey and gooey. Feel free to add in a sauce at this step if you’d like such as mayonnaise or chipotle aioli. You could also add avocado if that’s your vibe and enjoy!
VARIATIONS TO TRY
There are so many ways to switch this recipe up and make to your taste! Let’s start with the eggs. Here are some other options you can try if you don’t like scrambled eggs.
- use circular molds to create egg “patties”
- a regular fried egg and just fold the hanging sides in
- bake eggs in a tray in the oven and cut into squares
- use only egg whites
Now let’s jump to the protein. This recipe uses beef bacon but you can also use turkey bacon. Another option is to use turkey/chicken sausage and you can make this from scratch or purchase from the store. If you don’t want any meat, just keep it vegetarian with the egg and cheese.
Moving on to the breast, I used these croissant rolls I found at my local grocery store but they can be hard to find. You can swap out with any kind of bread that reheats well. English muffins are a great option! Another option you can opt for is bagels. Whatever you choose to do, I’m sure it will be delicious.

Smoked Gouda Croissant Breakfast Sandwich
Ingredients
EGGS- 1 tablespoon unsalted butter
- 8 large eggs
- salt, to taste
- black pepper, to taste
- 6 smoked Gouda or cheddar cheese slices
- 6 croissant buns, buttered and toasted
- 8 ounces cooked beef or turkey bacon
Instructions
MAKE THE EGGS
- To a bowl, crack all the eggs in and season with salt and a bit of black pepper. Whisk together well until smooth.
- Heat a large non-stick frying pan over low heat and add vegetable oil. Pour in the whisked eggs. Slowly stir with a rubber spatula in circular motions continuously as they cook. The key is to go low and slow. Once the eggs hold their shape turn off the heat to prevent overcooking and set aside.
ASSEMBLE SANDWICHES
- To each buttered and toasted bun, add eggs, a slice of cheese, and beef bacon. Close the sandwich and fill in the rest.
- Wrap each one in sandwich paper and store it in a ziploc bag or container in the freezer.
- To enjoy, pop in the microwave for 90 seconds and enjoy warm!
