Croque Monsieur Breakfast Croissants

Turn the iconic French sandwich, Croque Monsieur, into the most delicious and indulgent breakfast sandwich! It’s stuffed with the creamiest bechamel sauce, fluffy eggs, ooey gooey gruyere cheese, and turkey ham. It is truly the best way to start your day hands down!

The Bechamel

Bechamel is a delicious white sauce that is used in so many different dishes from pasta to sandwiches, and even vegetable bakes. It’s a great basic skill to just know how to make a great smooth bechamel and today is the day you learn that. Unless you already know, skip right on! Here are the ingredients you need:

  • butter
  • all purpose flour
  • whole milk, warm
  • salt
  • black pepper
  • cream cheese
  • parmesan
  • nutmeg
  • mustard powder

All bechamels start off with a roux which is a mixture of equal parts butter and flour. Melt down butter in a large saucepan over medium heat and add all-purpose flour. Whisk together until all smooth. Add warm whole milk and whisk together until smooth and it’ll start to thicken up as you mix.

Season with salt, black pepper, nutmeg, mustard powder, cream cheese, and parmesan. Mix together until combined well, taste, and adjust anything to your liking.

Making the Creamiest Fluffiest Eggs

French-style eggs are so creamy and fluffy and I’m going to show you how to make them! It’s actually very easy to make but you just have to follow these next few tips to make sure nothing goes wrong.

  • low and slow – cook over low heat
  • stir constantly – this breaks down the curds so they’re soft
  • butter or oil – butter tastes better but anything that adds fat and prevents sticking
  • do not overcook! – they need to glisten

In a bowl, whisk together eggs with salt and a sprinkle of black pepper until combined well. Add butter or oil over low heat to a pan. Immediately add the eggs in before letting the butter or oil get hot. Continuously stir with a rubber spatula as the eggs cook. They are done right when they are set but do not overcook. They will look a little wet still but will have shape. Immediately take off the heat and transfer to a plate. And that’s it!

Assembling the Croissants

Now the point of this recipe is to use some up croissants that may have gone stale. KEY word stale not gone BAD – those two things are different. If you have ever bought a large box of croissants from Costco and had a few leftover, this is what you make so they taste freshly baked and even better!

Start by cutting the croissants in half. Add bechamel sauce to both sides. Then add two slices of turkey ham, the fluffy eggs, gruyere and parmesan cheese, and finally a crack of black pepper. If gruyere cheese is too strong for your taste, you can substitute half with shredded Monterey jack cheese. This is what I did! Close the croissants. Now you could just bake as is or take it to the next step.

Brush the tops with egg wash which is just one egg and a splash of milk whisked together. You can then add sesame seeds, everything bagel seasoning, or poppy seeds on top. Bake in the oven at 400°F for 10 to 12 minutes until golden and crispy all around. Enjoy warm!

Ingredients

BECHAMEL SAUCE
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 1 1/4 cup whole milk
  • 1/4 to 1/2 teaspoon salt, to taste
  • 1/2 teaspoon mustard powder
  • 1/4 teaspoon black pepper
  • 2 tablespoons cream cheese, softened
  • 1/4 cup parmesan, freshly grated
  • 1/8 teaspoon nutmeg
EGGS
  • 2 tablespoons vegetable oil
  • 8 eggs
  • salt, to taste
  • black pepper, to taste
FOR ASSEMBLY
  • 6 croissants
  • 12 ounces turkey ham
  • 1 cup gruyere cheese, shredded
  • 1/4 cup parmesan, grated
  • black pepper, to taste
  • 1 large egg
  • 1 tablespoon whole milk
  • topping options: everything bagel seasoning, poppy seeds, or sesame seeds

Instructions

MAKE THE BECHAMEL SAUCE
  1. To a deep saucepan or pot over medium heat, add the butter. Once melted, add the all-purpose flour and whisk together until there are no clumps. Now that you have your roux, cook it for about 2 to 3 minutes.
  2. Now add the milk, salt, black pepper, cream cheese, parmesan, nutmeg, and mustard powder. Mix together well and bring to a light boil.
  3. Continuously whisk the sauce until it starts to thicken up. Immediately take off the heat when it is thick. Taste and adjust any seasoning to your liking. Set aside.
PREPARE EGGS
  1. To a bowl, crack all the eggs in and season with salt and a bit of black pepper. Whisk together well until smooth.
  2. Heat a large non-stick frying pan over low heat and add vegetable oil. Pour in the whisked eggs. Slowly stir with a rubber spatula in circular motions continuously as they cook. The key is to go low and slow. Once the eggs hold their shape turn off the heat to prevent overcooking and set aside.
ASSEMBLE AND BAKE
  1. Preheat oven to 400°F. Line a large baking tray with parchment paper.
  2. Cut open the croissants down the middle and place on the tray. Add bechamel sauce to both sides.
  3. Then add two slices of turkey ham, eggs, a sprinkle of gruyere cheese, and parmesan cheese. Seal it up and repeat with the other croissants.
  4. Brush the tops with egg wash and sprinkle on toppings of choice or a mix of all three sesame seeds, poppy seeds, and everything bagel seasoning.
  5. Bake in the oven for 10 to 12 minutes until golden and crispy.
  6. Take out of the oven and serve warm!
