Valentine’s Coffee – Starbucks Copycat

Strawberry Cold Foam is the most delicious festive topping to add to your coffee on Valentine’s Day! The beautiful pink color and the creamy fruity flavor taste just like a chocolate-covered strawberry. Let’s make it at home and even better than Starbucks!

Strawberry Syrup From Scratch

Did you know it’s so easy to make strawberry syrup from scratch? Of course you can use store-bought strawberry syrup like Torani or even the Hershey’s one used for ice cream sundaes. But it’s even better to make it yourself and it’s super simple. You can also use any syrup leftovers on pancakes, waffles, or ice cream.

Here are all the ingredients you need:

  • frozen strawberries
  • water
  • granulated white sugar

The best part is it all comes together in one pot. Just add all the ingredients above to a pot and cook the strawberries down until softened. You can also use fresh strawberries but frozen is easier! Once the strawberries are softened, mash them down, and keep simmering until a thick syrup forms. Strain out the pulp and transfer the syrup to a jar.

Strawberry Vanilla Cold Foam

Making vanilla cold foam is so easy! It’s my favorite thing to add to my coffee when I want it to be sweet and creamy. It takes three ingredients and less than 5 minutes of time if you have an electric whisk!

I definitely recommend having a handheld electric whisk to make the process a lot easier and faster. Add the heavy cream, milk, and vanilla extract. You can also add vanilla syrup instead of vanilla extract if you want it to be sweeter. Combine together with the whisk until thick and airy. Mix in the strawberry syrup now until it has a light pink hue and there you have strawberry vanilla cold foam! It basically tastes like a light strawberry milkshake.

Making the Drink

Now let’s get to the actual coffee part! Start by brewing some shots of espresso to make a latte. Get a large cup for iced drinks and add the syrup to the bottom. You can either use white mocha sauce like Starbucks does or use a regular chocolate mocha sauce. You can also sweeten the drink with vanilla syrup or whatever flavoring you like. You can purchase white mocha sauce at the store or online or just make the copycat version from the blog!

Once you have the desired amount of sauce/syrup, add the shots of espresso and mix together to incorporate. Then add ice and your milk of choice in a latte and top with the strawberry cold foam. This is completely optional but garnish the top with crushed freeze-dried strawberries to enjoy!

Ingredients

STRAWBERRY SYRUP
  • 10 ounces frozen strawberries
  • 1/4 cup granulated white sugar
  • 1/2 cup water
  • 2 teaspoons cornstarch
STRAWBERRY COLD FOAM
  • 1/2 cup heavy cream
  • 2 tablespoons 2% milk
  • 1 teaspoon vanilla extract or 1 tablespoon vanilla syrup
  • 3 tablespoons strawberry syrup
FOR DRINK
  • 2 to 3 espresso shots
  • 1/2 to 1 tablespoon white mocha or chocolate sauce
  • milk of choice
  • strawberry cold foam
  • freeze-dried strawberries, crushed into powder

Instructions

STRAWBERRY SYRUP
  1. Make the strawberry syrup. To a pot over medium heat, add the frozen strawberries, sugar, water, and cornstarch. Mix together.
  2. Cook down the strawberries for 6 to 7 minutes until softened. Mash them down with a spoon when softened and simmer for another 5 to 6 minutes.
  3. Strain out the syrup from the pulp into a bowl and set aside. You can discard the pulp.
MAKE THE COLD FOAM
  1. In a bowl, jar, or measuring cup, add the heavy cream, 2% milk, vanilla, and strawberry syrup. Whisk together with an electric whisk until thickened and has a pink color.
  2. To a cup, add white mocha sauce, chocolate sauce, or any sweetener you like in your coffee. Add the shots of espresso and mix together. Add milk and ice to taste and top with strawberry cold foam.
  3. Top it off with freeze-dried strawberry powder to enjoy!
