The Shawarma

This marinade could not be more flavorful truly. If you like the Halal Cart Chicken and Rice recipe on the blog, you will LOVE this. It’s packed with so many warm spices as well as lots of garlic and citrus. It’s easy to make, can be meal prepped ahead of time, and it’s so versatile with what you can enjoy it with.

Here is everything you need:

  • chicken breast or thighs, boneless and skinless
  • lemon juice
  • olive oil
  • garlic
  • allspice
  • cumin
  • paprika
  • sumac
  • salt
  • black pepper
  • turmeric
  • coriander

Chop the chicken into small pieces and add to a bowl with all the ingredients listed above. Mix together to marinade evenly. You can start skewering it right away and cook it. The other option if you have time or want to prep ahead of time, cover and let it marinade in the fridge for 30 minutes. The longer the better, you could even let it sit overnight.

There are two ways you can opt to cook it! The first method is to just saute it on the pan in a little bit of olive oil over medium heat. Cook until the chicken is seared all around and fully cooked in the center. The second option is to air fry it for 8 to 9 minutes at 450°F.

Toppings

Now for the fun part, the toppings! There are a few ingredients that are my go-to and those are the ones that I used in this recipe. However, you can always feel free to use whatever you like most that goes well with the flavor profile of this dish. Here’s what I used!

  • PEPPERONCINIS: These are mild chili peppers that add a tangy and slightly spicy kick to the dish. They are chopped into small pieces and sprinkled over the loaded fries for a little hint of heat. You can opt for a spicier pepper if you want even MORE heat!
  • KALAMATA OR BLACK OLIVES: Kalamata olives have a rich, fruity flavor and I love the color they add to this. Alternatively, black olives can be used, offering a milder taste and more of a briny, salty note. Any olives will truly get the job done!
  • RED ONION: Diced red onion adds a pop of color and a crisp, slightly pungent flavor to the dish to cut down on the heaviness of the other ingredients like the chicken and creamy sauce.
  • PARSLEY: Parsley honestly just makes the loaded fries look so pretty but secondary, it adds a fresh brightness.
  • FETA CHEESE: It wouldn’t be nachos without fries! Crumbled feta cheese adds a creamy AND tangy element to the loaded fries.

The Fries

When it comes to fries, it’s up to you how easy or difficult you want to make the process! You can just use frozen fries from the grocery store and deep-fry them or air-fry them until golden and crispy. If you want to make the fries from scratch, there’s an amazing recipe on the blog for them but they do take some more time and effort.

You can also try making this with sweet potato fries or waffle fries! You could even eliminate the fries entirely and go for tortilla chips like traditional nachos.

Variations to Try

There are endless possibilities for variations on Chicken Shawarma Loaded Fries, allowing you to customize the dish to suit your taste preferences or dietary restrictions. Here are a few ideas to inspire your culinary creativity. As always, just remember to have fun in the kitchen and do everything to your taste!

VEGETARIAN OR VEGAN OPTION:

Substitute the chicken with roasted or grilled vegetables such as bell peppers, zucchini, eggplant, and/or mushrooms. Marinate the vegetables in the same spice blend as the chicken for that same shawarma flavor.

Ingredients

CHICKEN SHAWARMA
  • 1 pound chicken breast, chopped into pieces
  • 2 tablespoons olive oil
  • juice of 1/2 lemon
  • 2 teaspoons garlic, minced
  • 2 teaspoons allspice
  • 1 teaspoon coriander
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt to taste
  • 1 teaspoon sumac
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon turmeric
WHITE SAUCE
  • 1 cup mayonnaise
  • 1/3 cup sour cream or plain yogurt
  • 5 to 6 garlic cloves
  • 1 teaspoon white sugar
  • 1/2 lemon, juiced
  • 1 teaspoon black pepper, more to taste
FOR ASSEMBLY
  • french fries
  • pepperoncinis, chopped
  • kalamata or black olives, chopped
  • red onion, diced
  • parsley, finely chopped
  • feta cheese, crumbled

Instructions

MAKE THE WHITE SAUCE
  1. Add all the ingredients for the white sauce into a food processor or blender.
  2. Blend until smooth and creamy and transfer to an air-tight jar to store in the fridge!
MAKE THE SHAWARMA
  1. To a large bowl, add the chicken, olive oil, lemon juice, garlic, and spices. Mix to marinade evenly.
  2. Heat oil in a cast iron skillet or pan over high heat. Add the chicken and cook for 8 to 10 minutes until seared all around and fully cooked. Take off the heat.
ASSEMBLE
  1. To a plate or tray, add the french fries and the chicken.
  2. Drizzle white sauce on top. Add the pepperoncinis, olives, red onion, feta cheese, and parsley to taste.
  3. Enjoy warm!

This was great!! My guest noted this could be made into poutine if adding gravy so will def make that as well!!
