Pumpkin Churro Cheesecake Bars

Fall is the season of cozy flavors, and these Pumpkin Pie Churro Cheesecake Bars are the perfect way to bring all those comforting vibes to your kitchen. With creamy, spiced pumpkin cheesecake filling nestled between flaky crescent dough and topped with a golden, cinnamon sugar crust, these bars are everything you want in a fall dessert. They’re easy to make, perfect for sharing, and sure to be a crowd-pleaser at any fall gathering!

The Pumpkin Pie Cheesecake Filling

Let’s start with the creamy, spiced filling that takes this dessert to the next level. To achieve that perfect smooth texture, it’s essential to use room-temperature ingredients. This means your cream cheese and eggs should be out of the fridge for at least an hour or more before you start mixing—this helps avoid lumps and ensures a creamy consistency. The key here is to use a stand mixer with a paddle attachment or a hand mixer to beat everything together.

Begin by adding the cream cheese and granulated white sugar (plus the brown sugar for that extra fall sweetness) to the mixing bowl. Beat on medium speed until the mixture is smooth and creamy, which should take around 2-3 minutes. Scrape down the sides of the bowl halfway through to make sure everything is getting incorporated. If you’re using a hand mixer, be sure to mix for a little longer to get that smooth texture, but a stand mixer will do the heavy lifting.

Now, add the pumpkin puree, which brings that lovely fall flavor, along with the eggs, sour cream, heavy cream, and vanilla extract. Beat everything together until it’s completely smooth and creamy. Here’s a tip: if the batter looks a little lumpy at first, just keep mixing! It will come together perfectly. Add in your pumpkin pie spice, salt, and a little flour to help the filling set as it bakes.

To make sure your filling is free of air bubbles (which can affect the final texture), tap the bottom of your mixing bowl a few times on the counter. This will release any trapped air and help your cheesecake layer bake up beautifully smooth.

Making the Cinnamon Sugar Crust

Now for the cinnamon sugar topping—this is the magic that makes these bars taste like a warm, spiced churro! The crust has the perfect combination of sweetness and a little crunch, thanks to the cinnamon sugar. To make the cinnamon sugar, simply combine white sugar and cinnamon in a small bowl. You’ll need enough to generously coat the bottom and top of your bars, so don’t be shy with the sprinkle!

For the dough, I love using Pillsbury Crescent Roll sheets. They’re so easy to work with and create that buttery, flaky texture that pairs perfectly with the creamy pumpkin filling. They are also conveniently the size of a 9×13 pan. If you’re using a hand-rolled dough (like puff pastry), you’ll want to ensure it’s rolled out evenly and fits snugly into the pan.

Assembling the Bars

Assembling these bars is easier than it sounds, but you’ll want to be careful to get the layers just right. First, generously butter your baking dish before sprinkling half of the cinnamon sugar mixture on top. Add one Cresent Roll dough sheet on top of the melted butter and sugar. Make sure it covers the entire bottom of the dish and press the dough into the edges. The dough should fit snugly, so there’s no spilling over when you add the filling.

Next, pour your pumpkin cheesecake filling over the dough, spreading it into an even layer. The filling should be thick and luscious, so don’t worry if it’s not perfectly smooth—just spread it as evenly as possible.

Once you’ve added the filling, it’s time for the second sheet of crescent dough. Lay it over the filling carefully, making sure it covers the entire surface. Don’t worry if there are seams—they’ll bake together into a seamless, golden crust. Brush the top with melted butter and sprinkle generously with the remaining cinnamon sugar.

Baking the Pumpkin Pie Churro Cheesecake Bars

Now it’s time to bake! Preheat your oven to 325°F and place the assembled bars into the oven for 35 to 40 minutes. Keep an eye on them as they bake—the top should be golden brown and the filling should be set. You can check if it’s done by gently tapping the pan. If the filling doesn’t jiggle, it’s ready!

Once they’re out of the oven, let them cool to room temperature on the counter. This is a crucial step, so don’t rush it! After they’ve cooled, cover them with plastic wrap and transfer them to the fridge to chill for at least 6 hours—or overnight, if you can wait. Chilling helps the cheesecake set and makes the bars much easier to cut. Plus, the flavors meld together beautifully when they’ve had time to rest.

Serving and Enjoying

After all that waiting, it’s finally time to slice and enjoy your delicious pumpkin pie churro cheesecake bars! They’re great on their own, but if you want to make them even more indulgent, top them with a dollop of whipped cream, a sprinkle of cinnamon, or a drizzle of caramel or dulce de leche. These bars are the perfect balance of creamy, crunchy, and sweet—a fall dessert you’ll be making again and again.

Tips, Tricks, and Variations

  • Pumpkin Puree: Make sure you’re using pumpkin puree, not pumpkin pie filling, which contains added sugars and spices that could throw off the balance of your bars. If you want to kick it up a notch, add a bit more cinnamon or nutmeg to the filling.
  • Cream Cheese: For the smoothest filling, ensure the cream cheese is at room temperature before mixing. This prevents lumps and helps everything combine evenly.
  • Dough Alternatives: While crescent dough works perfectly here, you can use puff pastry or even a homemade sweet dough if you’re looking for something a little more decadent. Puff pastry will give you an even flakier result!

Storing and Make-Ahead Tips

These bars are perfect for making ahead. In fact, they taste even better after they’ve had a chance to chill and set in the fridge. You can prepare the bars up to a day in advance and bake them the morning of your gathering. If you want to freeze them, wrap them tightly in plastic wrap and foil and store them in an airtight container. Let them thaw overnight in the fridge before serving for the best texture.

If you have any leftovers (which, let’s be real, is unlikely), store them in an airtight container in the fridge. They’ll stay fresh for up to 3 days.

These Pumpkin Pie Churro Cheesecake Bars are the ultimate fall dessert—rich, creamy, and bursting with cozy flavors. They’re simple to make but look and taste like you spent hours in the kitchen. Whether you’re serving them at a family gathering, a fall party, or just as a sweet treat to enjoy with a hot cup of cider, these bars will not disappoint!
