Ingredients
CAKE BATTER
- 1 2/3 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2/3 cup white granulated sugar
- 1/3 cup light brown sugar
- 1/2 cup unsalted butter, room temp
- 2 large eggs
- 1 cup smashed ripe banana
- 1 teaspoon vanilla extract
- 1 cup whole milk
FROSTING
- 8 oz cream cheese, room temperature
- 1/4 cup unsalted butter, browned
- 1 3/4 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F.
- To a large mixing bowl, add the butter, light brown sugar, and white sugar. Use a mixer to beat the sugar and butter together until light and fluffy.
- To the same bowl with the butter and sugar, add the eggs, smashed banana, vanilla, and milk. Whisk together again until smooth.
- Now add all the dry ingredients to the wet. This includes all-purpose flour, baking soda, baking powder, and salt.
- Combine together until you have a batter.
- Line an 8 x 8 pan with parchment paper and transfer the batter.
- Transfer to the oven and bake for 25 to 28 minutes until a toothpick comes out clean in the center.
- Remove from the oven and allow to cool for about an hour before frosting.
- Start by browning the butter.
- To a pan over medium heat, add the butter. Cook for 5 to 6 minutes until it starts to bubble and then brown. Make sure not to cook it any further or it can burn. Transfer it to a bowl and allow it to cool so it's not hot. You can transfer it to the fridge for a few minutes until it sets solid at room temperature.
- To a mixing bowl, add the browned butter, cream cheese, powdered sugar, and vanilla extract.
- Beat for 1 to 2 minutes until fluffy and smooth.
- Once the cake is cooled, add the frosting on top, adding as little or as much as you'd like.
- Slice and enjoy!
