Ingredients

CAKE BATTER

  • 1 2/3 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2/3 cup white granulated sugar
  • 1/3 cup light brown sugar
  • 1/2 cup unsalted butter, room temp
  • 2 large eggs
  • 1 cup smashed ripe banana
  • 1 teaspoon vanilla extract
  • 1 cup whole milk

FROSTING

  • 8 oz cream cheese, room temperature
  • 1/4 cup unsalted butter, browned
  • 1 3/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F.
  2. To a large mixing bowl, add the butter, light brown sugar, and white sugar. Use a mixer to beat the sugar and butter together until light and fluffy.
  3. To the same bowl with the butter and sugar, add the eggs, smashed banana, vanilla, and milk. Whisk together again until smooth.
  4. Now add all the dry ingredients to the wet. This includes all-purpose flour, baking soda, baking powder, and salt.
  5. Combine together until you have a batter.
  6. Line an 8 x 8 pan with parchment paper and transfer the batter.
  7. Transfer to the oven and bake for 25 to 28 minutes until a toothpick comes out clean in the center.
  8. Remove from the oven and allow to cool for about an hour before frosting.
  9. Start by browning the butter.
  10. To a pan over medium heat, add the butter. Cook for 5 to 6 minutes until it starts to bubble and then brown. Make sure not to cook it any further or it can burn. Transfer it to a bowl and allow it to cool so it's not hot. You can transfer it to the fridge for a few minutes until it sets solid at room temperature.
  11. To a mixing bowl, add the browned butter, cream cheese, powdered sugar, and vanilla extract.
  12. Beat for 1 to 2 minutes until fluffy and smooth.
  13. Once the cake is cooled, add the frosting on top, adding as little or as much as you'd like.
  14. Slice and enjoy!
