Ingredients
TUNA SALAD FILLING
- 1 (12-ounce) can solid white albacore tuna, drained
- 1/2 cup mayonnaise
- 1/3 cup red onions, chopped small
- 1/3 cup sweet yellow corn
- 1 jalapeño, seeds and stem removed, finely chopped
- 1/2 tablespoon yellow mustard
- 1 tablespoon chopped parsley
- 1/2 teaspoon salt, add to taste
- 1/2 teaspoon black pepper
- squeeze of lemon juice
- 5 large flour tortillas (burrito size) — cut 1 into 4 smaller circles for sealing
- 1 head romaine lettuce, thinly chopped
- 1 (8-ounce) block sharp cheddar cheese, shredded
- 1 bag nacho-flavored tortilla chips
- 1/4 cup pickled jalapeños (tamed or mild)
- neutral oil, for toasting
Instructions
- Make the tuna salad filling: In a mixing bowl, combine the drained tuna, mayonnaise, red onions, corn, jalapeño, yellow mustard, chopped parsley, juice of half a lemon, salt, and pepper. Mix until creamy and well combined.
- Prep the sealing tortillas: Take one large flour tortilla and cut it into four smaller circles using a bowl or lid as a guide. Set aside — these are for sealing the Crunchwraps.
