The best part about the super bowl in my opinion is all the food. I love making super bowl recipes because they’re always so hearty and really indulgent. Last year, I made buffalo chicken wonton cups so this year we are taking that filling and turning them into stuffed rolls. They truly are so easy to make and after one bite, my husband said these might be the best thing he’s ever had. Let’s make them!

The Buffalo Chicken Filling

The first part of this recipe is to prepare the buffalo chicken filling.

For the chicken, you can boil chicken breast yourself or just get a rotisserie chicken like I did and shred it yourself to make it that much easier!

Then to the shredded chicken, you’ll add buffalo sauce, ranch, cheddar cheese, mozzarella, cilantro, garlic, green bell pepper, and cream cheese. Feel free to also add chopped green onion or red onion to the mix as well. Combine it all together well and that’s it!

My favorite brand of buffalo sauce to use is Frank’s Red Hot. For the cheddar cheese and mozzarella, I like to use a blend of both but you can also use only mozzarella or even swap it out for Monterrey jack cheese.

The Garlic and Herb Butter

The second part to this recipe is making the garlic and herb butter which takes the flavor of these rolls to the next level!

HERE ARE ALL THE INGREDIENTS YOU WILL NEED:

  • unsalted butter, melted
  • garlic cloves, minced
  • parsley, finely chopped
  • salt
  • black pepper
  • oregano
  • parmesan, grated
  • red pepper flakes

Just add everything to a small bowl, mix together, and it’s ready to go!

TIP: If you’re short on time, you can skip the garlic and herb butter entirely. The second option is to just buy pre-made garlic and herb butter from the store. The third option is to use garlic powder and dried parsley instead of fresh garlic and fresh parsley so less chopping for you.

Assembling & Baking

To assemble, get a 12 pack of King’s Hawaiian Dinner Rolls. You can choose to separate them or leave them attached like I did – either way is fine.

Cut a square in the center of each one and take that piece out to hollow the roll out. Do not cut too deep so the bottom of the roll remains intact.

Now add about 2 tablespoons of the buffalo chicken filling into the hole or enough to fill it to the top.

Brush the rolls generously with the garlic and herb butter and add cheese on top of each roll in the center and pop in the oven. Bake for 10 to 15 minutes at 350°F until the cheese is golden and melted! Optional, low broil for a minute or two to toast the top but be VERY CAREFUL to not burn the rolls. Monitor CLOSELY!

Take out of the oven and optional, garnish with parsley or chives on top to enjoy!

Ingredients

BUFFALO CHICKEN FILLING
  • 2 to 3 cups shredded chicken
  • 3/4 cup buffalo sauce
  • 1/4 cup ranch
  • 2 tablespoons cream cheese, softened
  • 1/2 cup cheddar cheese, shredded
  • 1/2 cup mozzarella cheese, shredded
  • 2 teaspoons garlic, finely minced
  • 1 tablespoon cilantro, finely chopped
  • 1 whole green bell pepper, diced
  • 1/4 cup sliced green onions or diced red onions, optional
  • more cheddar and mozzarella to add on top
GARLIC & HERB BUTTER
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons parsley, finely chopped
  • 1 tablespoon garlic, finely minced
  • 3 tablespoons parmesan grated
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
FOR ASSEMBLY
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup shredded mozzarella cheese
  • 12 Hawaiian Dinner Rolls
 

Instructions

  1. Preheat oven to 350°F.
MAKE THE GARLIC BUTTER
  1. To a small bowl, add the melted butter, parsley, garlic, parmesan, salt, black pepper, oregano, and red pepper flakes. Mix together and set aside.
MAKE THE FILLING
  1. To a large bowl, add the shredded chicken along with buffalo sauce, ranch, cream cheese, cheddar, mozzarella, garlic, cilantro, and green bell pepper. Feel free to also add green onion or red onion. Mix until combined. Set aside.
ASSEMBLE AND BAKE
  1. Prepare the dinner rolls by cutting a square out of the center of each one.
  2. Add about 2 tablespoons of filling into each one until filled to the top.
  3. Brush all the rolls with the garlic butter.
  4. Combine the two cheeses together and sprinkle a bit on top of each roll in the center.
  5. Pop in the oven to bake for 10 to 15 minutes until the cheese is melted and crispy on top.
  6. Enjoy warm!
Tips & Notes
  • If you have any leftover filling, save it and enjoy it with some chips as a dip or make taquitos with it!
  • Feel free to add as much shredded chicken to your taste depending how saucy you want the filling to be.
