White Chocolate Caramel Cashew Clusters
Ooey gooey caramel cashew clusters are the easiest no-bake dessert that will have you feeling like a chocolatier master! The saltiness of the roasted cashews balances the sweetness of the chocolate and caramel so well – it’s truly unlike any other chocolate you buy from the store.

If you’ve ever been to Sprouts, they have these white chocolate caramel cashew clusters that are my absolute favorite! They sell them by weight and I always go a little crazy with them because cashews are my favorite nut and I’m a sucker for anything with caramel. Instead of making the trip to Sprouts, I figured why not make them at home and even better and it surprisingly was easier than ever to recreate them so let’s make them!
What You Will Need
The ingredients are so simple for this recipe! Here is what you need:
- cashews
- kraft caramels
- heavy cream
- white chocolate
For the cashews, you can use raw cashews or roasted. Just depends on which flavor you prefer. When it comes to salt, you can use salted cashews, lightly salted, or unsalted. I used salted cashews and LOVED the sweet and salty combo flavor. If you decide to use unsalted, you can add a sprinkle of flakey sea salt on top of the chocolate at the end to bring it that salty component.

Now moving on to the chocolate, I like using white chocolate but you can also use semi-sweet, milk, or dark chocolate. It all depends on what you prefer. You can also do a combination of the above! Have fun with it.
Moving on to the caramels, we will be using the bag of individually wrapped Kraft caramels. They come in an 11 ounce bag and sold at must supermarkets.
How to Make Them
The process couldn’t be easier so if you have kids and want to get them involved in the kitchen, now is the time. You barely need any equipment. Just a baking tray or any sort of large flat plate/tray! Start out by lining it with parchment paper.
Divide the nuts into clumps of about 12 to 15 cashews, about 1 inch apart on the baking sheet. One 8 ounce can of cashews will make about 15 clusters.

Add the caramels to a microwave safe bowl along with the heavy cream. Pop in the microwave in 30 second intervals, stirring each time, until completely melted and smooth. Add about a small spoonful or tablespoon of the caramel on top of each nut cluster, making sure it covers all the cashews.
Allow it to set until the caramel is firm to the touch, about 15 to 20 minutes. You can also transfer it to fridge to set faster. Now add a spoonful of white chocolate on top of the caramel and sprinkle the chopped cashews on top. Repeat with the rest. Now the ones I buy from the store are fully dipped and covered in chocolate but I saw Sally’s Baking Addiction make them this way and it turned out to be way easier and a lot less sweet too!
Transfer to the fridge for about 10 to 15 minutes until the chocolate firms up and then enjoys!

Tips & Notes
- The caramels I like to use for this recipe is the Kraft bag of individually wrapped caramels. You can find them in the candy section or baking section of grocery stores.
