Biscoff Rice Krispies Treats

Biscoff Rice Krispies Treats are the ultimate sweet tooth cure! Picture crispy ooey gooey bars mixed with crumbled Biscoff cookies and topped with a white chocolate and Biscoff spread swirl. It’s a nice twist on a classic American treat we all know and love but this might be ten times better than the original!

Biscoff has been having its moment on TikTok and as a huge Biscoff fan the last few years myself, I knew I had to make Biscoff Rice Krispies Treats. I actually shared a recipe for this on Instagram back in 2019 when I just started getting into food blogging so I had to bring it back and do it even better!

How to Make the Rice Krispies Treats

The best part about this dessert is NO BAKING involved and it is only about 15 minutes of hands on time!

Here are the ingredients you will need:
  • unsalted butter
  • vanilla extract
  • pinch of salt
  • Rice Krispies cereal
  • marshmallows
  • Biscoff cookies
  • white chocolate
  • Biscoff spread
The Steps:

Start out by lining a 9 inch x 9 inch square pan with parchment paper. This is the best size to use to get thick treats.

In a large pot or saucepan over medium heat, melt the butter. Once all melted, add the vanilla extract and mix. I like to add a pinch of salt just to balance the flavors as Rice Krispies Treats can get to be a bit too sweet.

Then add all the marshmallows. Continue to mix until the marshmallows have melted into the butter and you no longer see any clumps. Mini marshmallows work better as they just melt more evenly but normal marshmallows are fine too.

Pour in the cereal and crushed biscoff cookies and stir until it is all evenly incorporated. Take off the heat and quickly transfer to the pan. Use a rubber spatula to gently spread out evenly in the pan. You have to work fast as the marshmallows and set and get hard to work with really quickly. Do not pack it in too tight or they won’t be fluffy! If it is sticking too much, just dab a little water on the spatula or your fingers and it does the trick.

Melt the chocolate according to package directions in the microwave or using a double boiler. Spread on top of the Rice Krispies treats. Drizzle the biscoff spread in lines across one direction. Then take a toothpick and drag it through in alternating opposite directions to create the design. Sprinkle more crumbled biscoff on top if you’d like. Pop in the fridge for 15 to 20 minutes or until the chocolate is set and hard upon touch.

NOTE: If you don’t want it too sweet, you can also just a drizzle of white chocolate and biscoff spread on top after chilling and cutting into pieces.

Cut into 16 squares and if you’d like, press the bottom into more biscoff crumbs. Then enjoy!

Ingredients

  • 6 tablespoons unsalted butter

  • 16 ounces marshmallows mini preferred
  • 5 cups Rice Krispies cereal
  • 1/2 cup Lotus Biscoff cookies crushed
  • 8 ounces white melting chocolate (not all will be needed)
  • 1/4 cup Lotus Biscoff spread
  • crushed Lotus Biscoff cookies additional for topping and crust

Instructions

  1. Line a 9 inch x 9 inch square pan with parchment paper.

Question:
I don’t really like white chocolate.
Can you suggest another topping?

Suggestion:
I wish that your recipes included detailed information for measurements.
For example, how many Biscoff cookies make a half a cup of crushed cookies.
And if a box of Rice Krispies cereal is enough to make the 5 cups needed for the recipe.
Those details make it much easier to shop for the recipe.

For your measurements issues
Buy a big box of rice Krispy cereal and measure it out your self using measuring cups. And if extra make double or triple the amount I did the same and it works out just fine.
