Pistachio Chocolate Brownie Cups

Chocolate and pistachio is one of those combinations that never misses. These brownie cups were inspired by the viral Dubai chocolate bars with that crunchy pistachio kataifi filling that took the world by storm and has yet to die down. The best part is they look impressive, but they’re actually incredibly easy to make using a boxed brownie mix. Growing up, my sister used to make brownie cups on my birthday where you make a hole in them and fill them. She usually put marshmallows or peanut butter cups so I always love creating different versions on the blog. I’ve done smores brownie cups, twix cookie cups, and now we have Dubai Chocolate brownie cups.

Instead of making a full tray of brownies, the batter gets baked in a muffin tin so each one becomes its own little cup. Once baked, the centers are gently pressed down to make room for the pistachio filling. Inside is a mixture of crispy toasted kataifi and sweet pistachio paste that creates that creamy, crunchy texture that makes the Dubai chocolate bars so addictive.

The contrast of textures is what makes these so good. You have the fudgy brownie base, the crunchy pistachio center, and then a smooth chocolate ganache poured right on top. A sprinkle of chopped pistachios finishes everything off and adds even more nutty flavor.

Because we’re using a boxed brownie mix, the whole dessert comes together much faster than you’d expect. It’s one of those recipes that feels bakery-level but is actually very low effort.

The Pistachio Kataifi Filling

The star of this recipe is the pistachio kataifi mixture. If you’ve had or made the Dubai Chocolate bars, you probably don’t even need this recipe to make the filling. It’s super easy and straight forward. No different than the chocolate bar. All you need is two ingredients!

First up it Kataifi! This is a shredded phyllo dough that crisps up beautifully when toasted in oil. Once golden and crunchy, it gets mixed with our second ingredient, pistachio paste, to create a creamy filling with little crispy bites all throughout. Feel free to also add in a tiny splash of almond extract and a drizzle of tahini if you want a deeper roasted nutty flavor.

You’ll want to cook the kataifi slowly in neutral oil until it turns deeply golden. Stir often so it toasts evenly.

Moribyan Tip: After toasting the kataifi, transfer it to a plate lined with paper towel to drain any excess oil. This keeps the filling crisp instead of greasy.

Where To Find Kataifi

Kataifi is commonly used in Middle Eastern and Mediterranean desserts like knafeh and baklava.

You can usually find it:

  • In the freezer section of Middle Eastern or Mediterranean grocery stores
  • At Turkish or Greek markets
  • Occasionally at larger international supermarkets
  • Online if you don’t have a specialty store nearby

It’s typically sold frozen in small packages and defrosts quickly.

The Pistachio Paste

For this recipe I use a pre-sweetened pistachio paste, which means you don’t need to add any sugar to the filling. I love using this jar of pistachio paste by Pisti from Amazon. Because it’s already sweetened, it blends perfectly with the crispy kataifi and keeps the filling simple.

If you want the pistachio flavor to be even stronger:

  • Add a tiny splash of almond extract
  • Mix in a small spoonful of tahini

Almond extract enhances nutty flavors and tahini adds a roasted, nutty depth that makes the pistachio taste even more pronounced.

Baking the Brownie Cups

Instead of baking brownies in a pan, the batter goes straight into a muffin tin. This creates perfectly portioned brownie cups that are ideal for stuffing.

Fill each cavity about two-thirds to three-quarters full with brownie batter.

Bake until the brownies are:

  • crispy around the edges
  • shiny on top
  • slightly puffed

This usually takes about 18 to 22 minutes depending on the brownie mix.

While they’re still warm, gently press the centers down with the back of a spoon or a small glass. This creates the little pocket that will hold the pistachio filling. I like using the opposite end of a muddler if you have one. If you find the surface is sticking too much to the brownies, lightly spray it with oil and then press down.

Filling the Brownies

Once the brownie cups have cooled slightly, spoon the pistachio kataifi mixture right into the center of each one. Press it down gently so it fills the cavity fully!

The Chocolate Ganache

A simple chocolate ganache finishes everything off and brings the whole dessert together.

Chopped chocolate and heavy cream are microwaved in short intervals until smooth and glossy. The key is using low power and mixing between each interval so the chocolate melts evenly. If you prefer more of a chocolate layer with a snap, skip the heavy cream and just use melted chocoalte on its own. Also feel free to use milk chocolate instead if you prefer it over semi-sweet.

Pour the ganache right over the pistachio filling. You don’t need to cover the entire surface. Just a little in the center. Top with finely chopped pistachios for color, texture, and extra flavort to finish it off!

Variations

Once you make these once, it’s easy to switch things up.

  • Use milk chocolate ganache for a sweeter finish.
  • Sprinkle flaky sea salt over the ganache for a sweet-salty contrast.
  • Add almond extract and/or tahini into the pistachio filling for extra nutty flavor.

Make Ahead & Storage

These brownie cups keep really well, which makes them perfect for prepping ahead.

Store them in an airtight container:

  • at room temperature for about 1 day
  • in the refrigerator for several days

If refrigerated, let them sit at room temperature for a bit before eating so the brownie softens and the pistachio filling becomes creamy again.

Ingredients

BROWNIE CUPS
  • 1 box brownie mix, prepared according to package directions (eggs, oil, water/milk as listed)
PISTACHIO FILLING
  • 3 tablespoons neutral oil
  • 1/2 cup kataifi pastry, roughly chopped
  • 1/2 cup pistachio paste
CHOCOLATE GANACHE
  • 2 ounces semi-sweet or milk chocolate
  • 2 tablespoons heavy cream
FOR TOPPING
  • Finely chopped pistachios

Instructions

  1. Preheat the oven to 325°F and grease or line a muffin tin for 10 cups.
  2. Prepare the brownie batter according to the box instructions (eggs, oil, water/milk). Divide the batter evenly between the muffin cups, filling each about 3/4 full.
  3. Bake the brownies for 18 to 22 minutes, or until they are crispy around the edges, shiny on top, and puffed up.
  4. While the brownies bake, heat a pan over medium heat and add the neutral oil. Add the chopped kataifi and cook, stirring often, until the strands turn golden and crispy.
  5. Transfer the toasted kataifi to a plate lined with a paper towel to drain any excess oil. Then transfer it to a small bowl and combine with the pistachio paste until well mixed.
  6. Once the brownies come out of the oven, let them cool for about 20 minutes. Use the back of a spoon or the opposite end of a muddler to gently press down the center of each brownie to create a cup.
  7. Spoon the pistachio kataifi filling into each brownie cup to fill it up.
  8. Add the chopped chocolate to a bowl and pour the heavy cream over it. Microwave in 30-second intervals on low power, mixing between each interval, until smooth and glossy, about 2 to 3 intervals total.
  9. Spoon the chocolate ganache over the pistachio filling.
  10. Finish with a sprinkle of chopped pistachios on top and let the ganache set before serving.
