Making the Steak

Let’s start with the star of the show—the steak! You’ll want thinly shaved steak to get that perfect cheesesteak texture. You can typically find thinly shaved ribeye steak at most grocery stores, either pre-sliced in the meat section or at the deli counter. Ribeye, sirloin, or flank steak are great options for this, and if you can’t find it pre-sliced, don’t worry—you can easily make it at home!

How to Make Thinly Shaved Steak at Home:

If your store doesn’t carry thinly shaved steak, it’s easy to make your own. Here’s what you need to do:

  1. Freeze the Steak: Place your steak in the freezer for about 30-45 minutes. This firms it up, making it much easier to slice thinly.
  2. Slice Against the Grain: After the steak firms up, remove it from the freezer. Using a sharp knife, slice the steak thinly against the grain (those lines running through the meat). Aim for slices about 1/8 inch thick. If you have a mandoline slicer, you can use that for even thinner slices!

Once your steak is ready, heat some butter and oil in a pan over medium-high heat, and toss the steak in once the pan is nice and hot. Season it with salt, paprika, mustard powder, and black pepper—this will give the steak all the flavor it needs. As the steak cooks, use a spatula to break it apart if necessary and ensure it gets evenly browned.

Once the steak is fully cooked, add the Worcestershire sauce, which will give the steak a rich, savory flavor. Next, deglaze the pan with some beef broth, scraping up all the delicious brown bits that have stuck to the bottom. Let the broth simmer for a couple of minutes to reduce and thicken into a flavorful sauce. Set the steak aside while you prep the veggies.

Variation Tip: If you like mushrooms, this is the perfect time to add some! Slice up some cremini or button mushrooms and toss them in with the steak. The mushrooms will absorb all that delicious broth and steak flavor, adding an extra layer of savory goodness to your sliders.

Prepping the Veggies

While the steak is cooking, it’s time to focus on the veggies. Start by heating some oil in a pan over medium heat. Add the diced onion and thinly sliced green bell pepper, and let them cook until they soften and begin to caramelize—this usually takes about 5 to 7 minutes. Once they’re almost cooked down, throw in the minced garlic and cook for another minute or so until it becomes fragrant. You can also cook some mushrooms with the peppers and onions if you’d like. To save on some dishes, you can cook the veggies first in a pan and then transfer them to a plate and cook the steak in the same pot without even needing to clean it.

Don’t worry about mixing the veggies into the steak just yet! We’ll be layering the veggies on top of the steak later so they stay nice and crispy, giving your sliders that perfect texture contrast.

Assembling and Baking the Sliders

Now it’s time to prep the rolls. Slice the Hawaiian rolls in half horizontally, keeping them connected so they stay in a full 12-pack. Spread a thin layer of mayo on the cut sides of the rolls (I know it sounds weird, but trust me on this—mayo gives them a crispy, golden, buttery finish that you won’t get with butter alone). Pop them in the oven at 350°F for 5 to 6 minutes, or until they’re golden brown and toasted. This is when the magic of the rolls really happens, and the sweetness of the Hawaiian rolls with that crispy mayo layer is going to make your sliders next-level.

NOTE: Want to switch out the bread? You can use regular dinner rolls or slider buns if Hawaiian rolls aren’t your thing, though I think the sweetness of the Hawaiian rolls is the perfect match.

Once the rolls are toasted to perfection, place the bottom half of the rolls in a baking dish or tray. Now, grab the steak and layer it on top of the rolls evenly, making sure you’ve got all that juicy goodness spread out. Next, add the caramelized onions and peppers you set aside earlier—don’t mix them in with the steak because you want that contrast of textures and flavors. The veggies will give a little sweetness and crunch, which pairs perfectly with the savory steak. Then, it’s time for the cheese. You can use your favorite melty cheese for this, like provolone or Cooper Sharp (or if you’re feeling extra indulgent, even Cheese Whiz!). My favorite cheesesteak shop in Philly makes it with Cooper sharp which is a white American cheese and it’s my fave so that’s what I go for! Layer it generously over the veggies. Then, place the top half of the rolls on top, pressing them down just a little bit to make sure everything sticks together.

Brush the tops of the rolls with melted butter and sprinkle on some toasted sesame seeds for a little crunch and flavor boost. Cover the sliders with foil and bake them for about 10 to 15 minutes, or until the cheese is ooey and gooey. Once that’s done, remove the foil and bake for another 5 minutes to get that gorgeous golden top that you’ll love. The rolls will be crispy, the cheese will be melted perfectly, and the steak will be so juicy.

Let them cool for a minute so you don’t burn your mouth (trust me, I’ve been there), and then pull them apart. You’re going to get layers of tender steak, melty cheese, and caramelized veggies all sandwiched between those soft, golden rolls. I love enjoying them with some hot cherry peppers!

Ingredients

STEAK
  • 1 pound thinly shaved steak

  • 1/4 teaspoon black pepper
  • 1 tablespoon Worcestershire sauce
  • 1/4 cup beef broth
VEGGIES
  • 1/2 large yellow onion, diced
  • 1 green bell pepper, thinly sliced
  • 1 tablespoon neutral oil
  • salt, to taste
  • black pepper, to taste
  • 1/2 tablespoon minced garlic
FOR ASSEMBLY
  • 12-pack Hawaiian rolls
  • mayonnaise, for toasting bread (optional)
  • 4 to 6 slices cheese (Cooper Sharp, provolone, or cheese wiz)
  • melted unsalted butter, for brushing tops
  • toasted sesame seeds

Instructions

  1. Cook the Veggies: In a pan over medium heat, add neutral oil. Once hot, toss in the diced onion and sliced bell pepper. Season with a pinch of salt and black pepper. Sauté until softened and slightly caramelized, about 5 to 7 minutes. Stir in the minced garlic and cook for 1 to 2 minutes until fragrant. Remove from the pan and set aside.
  2. Cook the Steak: In the same pan, melt butter with neutral oil over medium-high heat. Add the shaved steak, breaking it apart as it cooks. Season with salt, paprika, mustard powder, and black pepper. Once the steak is browned, pour in Worcestershire sauce and cook for another minute. Then, pour in the beef broth to deglaze the pan, scraping up any browned bits for extra flavor. Let it simmer for 2 minutes until slightly reduced. Remove from heat.
  3. Prepare the Rolls: Preheat the oven to 350°F (175°C). Keeping the Hawaiian rolls connected, slice them in half horizontally. Spread a thin layer of mayonnaise on the cut sides. Place them mayo-side up on a baking sheet and toast in the oven for a few minutes until lightly golden.
  4. Assemble the Sliders: Place the bottom half of the toasted rolls in a baking dish or tray. Evenly spread the cooked steak over the bread, then layer the sautéed veggies on top. Add your choice of Cooper Sharp, provolone, or Cheese Whiz over the veggies. Place the top half of the rolls on.
  5. Finish and Bake: Brush the tops with melted butter and sprinkle with toasted sesame seeds. Cover loosely with foil and bake for 10 to 15 minutes until the cheese is melted. Then, remove the foil and bake for another 5 minutes until the tops are golden brown.
  6. Serve: Let the sliders cool slightly before pulling them apart. Enjoy warm!
