McDonald’s Chicken Snack Wrap

Although we don’t eat at McDonald’s anymore, they really did us dirty years and years ago when they took the Snack Wrap off the menu, but don’t worry—I’ve got you! We’re making it at home, and it’s even better than the original. Think crispy, golden fried chicken, soft flour tortillas, fresh shredded lettuce, melty cheese, and a homemade ranch sauce that’s so good, you’ll want to drizzle it on everything. This wrap is the perfect balance of crunch, creaminess, and nostalgia, and once you try it, you’ll never miss the real deal again.

The Secret to the Best Crispy Chicken

The key to the perfect Snack Wrap is making sure the chicken is crispy on the outside and juicy on the inside. We’re using a special double-coating technique that locks in all that crunch without needing breadcrumbs.

First, the chicken is dredged in a seasoned flour mixture made with flour, cornstarch, baking powder, paprika, salt, black pepper, and garlic powder. This dry coating helps the wet batter stick better and creates an even base for the breading.

Next, the chicken goes into a buttermilk batter seasoned with salt, black pepper, onion powder, garlic powder, paprika, and a little mustard for extra depth. This step tenderizes the meat and ensures a thick, flavorful coating.

Then, it’s dredged back into the dry flour mixture one last time. To get that flaky, craggy texture that fries up super crispy, we mix a few tablespoons of the wet batter into the flour before dredging—this creates little clumps that stick to the chicken and give it that signature crunch.

When it’s time to fry, the oil should be hot—about 365°F—so the chicken cooks evenly and turns a beautiful golden brown. Each piece fries for about 7 to 8 minutes, with occasional turning to make sure every side is perfectly crisp. Once they’re done, they rest on a paper towel to drain any excess oil, staying crispy while you get everything else ready.

The Creamiest Homemade Ranch

Let’s be real, the ranch is what ties the whole Snack Wrap together. Instead of using a store-bought version, we’re making it from scratch, and it’s so much better. It starts with mayonnaise and buttermilk for that creamy, tangy base, then a splash of yellow mustard for a little zip. Garlic powder, salt, and a generous amount of black pepper bring out all the flavor. But what really makes this ranch stand out? Fresh herbs! Finely chopped parsley and chives add a bright, fresh flavor that takes it to the next level. And if you love a little extra herby goodness, you can throw in some dill as well—it’s optional, but highly recommended for that classic ranch taste.

Bringing It All Together

Now for the best part—assembling the wrap. Start with a soft flour tortilla, warmed up just enough to make it pliable. Next, add a handful of shredded lettuce for that fresh crunch, followed by a generous sprinkle of Monterey Jack and cheddar cheese. Then comes the crispy chicken tender, which you can leave whole for that classic McDonald’s look or chop into bite-sized pieces for easier eating. And finally, drizzle on that creamy, herby ranch—don’t hold back! Wrap everything up snugly, folding in the sides slightly to keep everything in place.

Variations and Tips

Want to mix things up? There are plenty of ways to get creative with your Snack Wrap!

  • Spicy Snack Wrap – If you love heat, add cayenne pepper and extra paprika to the flour mixture, or mix hot sauce into the buttermilk marinade for a spicy kick. You can also drizzle some spicy mayo or hot honey sauce inside the wrap!
  • Honey Mustard Twist – Swap out the ranch for a homemade honey mustard sauce. Just mix together mayo, yellow mustard, honey, and a little vinegar for the perfect balance of sweet and tangy.
  • BBQ Style – Use BBQ sauce instead of ranch and add some crispy fried onions for extra crunch.
  • Beef Bacon Upgrade – Want to take things to the next level? Add a crispy slice of beef bacon for an extra savory, smoky bite.
  • Cheese Lovers’ Dream – Swap out the Monterey Jack for pepper jack if you want a little heat.

If you’re short on time, store-bought ranch will work, but I promise the homemade version makes all the difference. And if you’re making these for a crowd, you can fry the chicken in advance and just reheat it in the oven or air fryer before assembling!

Air Fryer Instructions

If you’re not in the mood for deep frying, the air fryer is a great alternative! Preheat your air fryer to 375°F. After you’ve breaded the chicken tenders, spray them generously with avocado oil to help them crisp up. Place the tenders in a single layer in the air fryer basket, making sure they’re not overcrowded. Depending on the size of your air fryer, you may need to do this in batches. Air fry for about 10–12 minutes, flipping halfway through, until the chicken is golden and crispy. Spray again as needed. It’s just as delicious, with way less oil—plus, it’s faster and easier to clean up!

  • 1/2 to 3/4 teaspoon black pepper, to taste

  • 1 tablespoon, chopped parsley
  • 1 tablespoon, chopped chives
OTHER
  • vegetable oil, for frying
  • flour tortillas
  • shredded lettuce
  • Monterey Jack and cheddar cheese, shredded

Instructions

RANCH SAUCE
  1. In a small bowl, combine mayo, buttermilk, yellow mustard, salt, black pepper, garlic powder,  to make a ranch sauce.
CHICKEN
  1. In a shallow and wide bowl, add flour, cornstarch, baking powder, paprika, garlic powder, salt, and black pepper. Whisk and set aside.
  2. In a deep bowl, add the buttermilk, salt, black pepper, paprika, garlic powder, onion powder, and mustard powder. Whisk together.
  3. Add 3 tablespoons of the wet batter into the dry and mix around to create a flaky texture.
  4. Dip each tender/strip first in the wet batter, then into the dry, then back into the wet, and finally into the dry for a double coating. Make sure to let any excess wet or dry drip off before dipping into the next. Once all the tenders are breaded, allow to rest for 10 minutes.
  5. Heat oil to about 350°F in a frying pan, about 1.5 to 2 inches high.
  6. Drop one tender in a time, making sure not to overcrowd them. Fry in 2 batches if needed. Fry until golden brown all around, about 7-8 minutes. Make sure to rotate the tenders around as needed for even browning. Transfer to a paper towel to drain any excess oil.
ASSEMBLY
  1. Grab a flour tortilla. Add shredded cheese on top.
  2. Optional, pop in the oven at 350°F to warm up the tortillas and melt the cheese.
  3. Place shredded lettuce on top, then the shredded cheese, then the tender (you can keep it whole or chop into smaller pieces).
  4. Drizzle ranch on top and enjoy!

Letting you know been making this recipe for the past two months and its honestly the closest recipe I made to the nostalgic taste of the snack wrap I used to eat as a kid.

Thanks for sharing this recipe 🙂

This recipe was delicious! I used boneless skinless chicken thighs and just cut them into strips, I didn’t have any buttermilk so I used milk and vinegar. Otherwise followed everything to a T. It turned out so good, crispy, perfectly cooked chicken. 10/10 recommend, would make again !
