Tuna Melt Hashbrowns
The only thing better than a traditional Tuna Melt is swapping the toast for a crispy hashbrown patty! It has the perfect crunch, an insane amount of flavor, and it’s actually packed with so much protein. Enjoy it as a snack or enjoy it as a meal – either way, it’ll go down as a treat!

There’s something uniquely satisfying about the perfect tuna melt, especially when it’s reinvented with crispy hashbrown patties. Imagine biting into a golden, crunchy hashbrown topped with creamy, tangy tuna salad, all finished with gooey, melted sharp cheddar cheese. It’s the kind of comfort food that makes you feel warm inside. I’m excited to share this tuna melt hashbrown recipe with you, crafted to perfection with a few of my favorite ingredients and a whole lot of love.
The Hashbrowns
Let’s start with the base of our delicious creation: the hashbrowns. Using frozen hashbrown patties is not only convenient but also ensures a consistent crispiness that’s crucial for this dish. My personal favorite is the one from Trader Joe’s but any brand you love will do. Preheat your oven to 400°F and place the hashbrowns on a tray lined with parchment paper. Bake them for about 7 to 9 minutes on each side until they achieve that perfect golden-brown color. The goal here is to get them crispy enough to support the toppings without becoming soggy.
NOTE: You can also prepare these in the air fryer, it’s totally up to you and your personal preference. My air fryer is small and I wanted to make more so I prepared mine in the oven. I will say hashbrowns cook faster in the air fryer than in the oven so the timing will vary depending on your preparation as well as the type of hashbrowns you use!
The Tuna Filling
While the hashbrowns are baking, it’s time to prepare the star of the show: the tuna filling. I prefer using solid white albacore tuna from a can for its firm texture and mild flavor. Make sure to drain the tuna well to prevent any excess moisture.
In a mixing bowl, combine the tuna with creamy mayonnaise, a squeeze of fresh lemon juice, and finely diced red onion for a bit of crunch. Sweet yellow corn adds a touch of sweetness, while finely diced jalapeño peppers bring in a subtle heat without overpowering the dish. A tablespoon of chopped parsley adds freshness, and season with black pepper, salt, and a teaspoon of yellow mustard ties all the flavors together into a harmonious blend.
NOTE: You can truly make the tuna filling anything you want it to be. This recipe is just how I like it and my favorite flavors/ingredients. Feel free to add anything to your taste. If you want it very spicy, add some drops of hot sauce or chili oil. You can swap the red onions with green onions! If you like celery, chop it and add it to the mix. For a lighter version, swap the mayo for yogurt or even cottage cheese. Some people also add pickle relish for a more tangy taste.
Assembling and Baking
Now comes the fun part: assembling and baking your tuna melt hashbrowns. Once the hashbrowns are out of the oven, generously spoon the tuna mixture onto each patty. Top the tuna salad with thin slices of ripe tomato, adding a juicy and colorful layer. Finally, sprinkle a liberal amount of shredded sharp cheddar cheese on top. Set your oven to broil and place the tray back in, watching closely as the cheese melts into a bubbly, golden perfection. This should take about 2 to 4 minutes, but be vigilant to prevent burning. It can go from beautifully golden and crispy to burnt char!
For a finishing touch, sprinkle freshly chopped chives or green onion over the top. They not only add a mild onion flavor but also enhance the visual appeal of your dish. Serve your tuna melt hashbrowns immediately, while they’re still hot and the cheese is perfectly melted.
Variations and Tips
This recipe is wonderfully versatile. For another option, consider swapping the hashbrowns for slices of roasted sweet potato. For an extra kick, add a dash of hot sauce or red chili flakes to the tuna mixture.
Feel free to experiment with different cheeses, like Swiss or pepper jack, to introduce new flavor profiles. If raw red onion isn’t to your taste, try caramelizing the onions first for a sweeter, more complex flavor.

Tuna Melt Hashbrowns
Ingredients
- 5 to 6 frozen hashbrown patties
- 8 ounces (2 cans) solid white albacore tuna, water drained
- 1/3 cup mayonnaise
- 1 teaspoon lemon juice
- 1/4 cup red onion, diced
- 3 tablespoons sweet yellow corn
- 1 jalapeño, seeds removed and diced
- 1 tablespoon chopped parsley
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1 teaspoon yellow mustard
- 1 cup shredded sharp cheddar cheese
- 1 large tomato, thinly sliced
- chopped chives, optional garnish
Instructions
- Preheat the oven to 400°F.
- Place the hashbrowns on a tray lined with parchment paper and bake for 7 to 9 minutes on each side until golden.
- To a bowl, add the tuna, mayo, lemon juice, red onion, corn, parsley, black pepper, salt, jalapenos, and yellow mustard. Mix together well.
- Take the hashbrowns out of the oven and add the tuna salad mix on top. Top with sliced tomato and then shredded cheddar cheese.
- Set the oven to broil and pop in the oven for 2 to 4 minutes until the cheese is golden and bubbly on top. Watch it closely so nothing burns.
- Take out of the oven, sprinkle chopped parsley or chives on top, and enjoy!
