Chocolate Date Caramel Peanut Butter Cups
Treat yourself to a fun twist on the classic Reeses peanut butter cup but made with a homemade date caramel. It’s creamy from the dates, crunchy from the peanuts, and so rich from the chocolate. These little sweet treats have the perfect balance of sweet and salty and are way more healthy than your typical chocolate peanut butter cups – not to mention tastier!

Preparing the Chocolate Shells
Let’s make some peanut butter cups from scratch! It’s so fun to make your own little chocolate treats at home from scratch and I promise it’s pretty easy. The best part is you don’t need any fancy equipment. The only thing you need is a cupcake tray and liner cups!
Begin by melting your favorite chocolate until it’s smooth and glossy, either using a double boiler or the microwave. I use the microwave – just heat on low power in 30-second intervals, stirring each time in between until fully melted. Take your time with this step, ensuring the chocolate reaches the perfect consistency for coating.
NOTE: You can use any chocolate you like, it can be milk, semi-sweet, or even dark chocolate.
Once melted, spoon the chocolate into muffin cups, using the back of the spoon or a butter knife to create an even layer along the bottom and sides of each cup. This forms that signature shell or cup shape of a peanut butter cup that will encase that delicious date caramel filling. Pop the trays in the fridge to set while we prepare the filling.
NOTE: If you don’t want to use liners, you can purchase a cup silicone mold and then you just pop them right out at the end.

Chocolate Date Caramel Peanut Butter Cups
Ingredients
- 1 cup date caramel
- 1/2 cup chopped peanuts
- 2 cups chocolate, melted (milk, semi-sweet, or dark)
- 1 tablespoon coconut oil
- sea salt, optional topping
- chopped peanuts, optional topping
Instructions
- Line a muffin/cupcake tray with paper liners or silicone muffin cups.
- Place the chocolate and coconut oil in a heatproof bowl.
- Microwave the chocolate in 30-second intervals, stirring after each interval until the chocolate is completely melted and smooth. Alternatively, you can melt the chocolate over a double boiler.
- Spoon about 1 tablespoon of melted chocolate into each muffin cup, using the back of the spoon to spread the chocolate evenly along the bottom and up the sides of each cup, creating a shell. Make sure to leave some melted chocolate aside for sealing the cups later.
- Place the muffin tray in the refrigerator to allow the chocolate shells to set for about 10-15 minutes.
- Transfer the date caramel filling to a bowl and stir in the chopped peanuts.
- Once the chocolate shells have set, remove the muffin tray from the refrigerator.
- Spoon a small amount of the date caramel and peanut mixture into each chocolate cup, filling them about three-quarters full.
- Using the remaining melted chocolate, spoon a little over the top of each cup, spreading it to seal the filling completely and create a smooth top.
- Optional, add a sprinkle of sea salt and chopped peanuts on top as a garnish.
- Return the muffin tray to the refrigerator and chill the chocolate cups for at least 30 minutes, or until the chocolate is completely set.
