The Animal Style In-N-Out Baked Potato

This is everything I love about animal style fries and a burger from In-N-Out, but with a baked potato instead of french fries. You’ve got that saucy beef, melty cheese, and caramelized onions soaking right into the fluffy center. It hits exactly like your order, just a little more cozy.

A crispy-skin russet. Ground beef cooked down with Worcestershire, mustard, and broth until it’s rich and saucy. A blanket of melted American cheese. Onions that took their sweet time in the pan. Pickles, pepperoncinis, and that creamy burger sauce over everything. It’s a lot going on, but it comes together in an hour and tastes so good and comforting.

Why it works

The baked potato is doing the work that fries usually do. Starchy, salty, a little crispy on the outside but now you’ve got this fluffy interior that soaks up everything piled on top of it. Every bite has potato and beef and cheese and sauce all at once.

The beef is the thing to pay attention to. You’re not just browning ground beef and calling it a day. The broth, the mustard, and the Worcestershire are what turn it into something saucy and flavorful.

🤎 KEY TECHNIQUE: Divide the beef into portions in the pan before adding the cheese. One slice per portion, lid on for about a minute and you get that perfectly melted, smash-burger-style cheese pull in every single bite.

The four components

  • The baked potato: 425°F, oiled and salted, straight on the rack for 45 to 60 minutes. Crispy skin, fluffy center. Flip halfway through and look for wrinkled, papery and crispy skin as your sign it’s done.
  • The burger sauce: Mayo, drained pickle relish, ketchup, and a pinch of sugar. Stir and done. Make it first so the flavors have time to come together before serving.
  • Caramelized onions: Low and slow over 15 to 20 minutes, adding water a spoonful at a time to prevent sticking and to help deglaze the pan. Don’t rush them. The deep golden color and sweetness are worth every minute.
  • The cheesy beef: 90/10 ground beef cooked down with broth, mustard, and Worcestershire until saucy. Portioned in the pan and topped with American cheese until melted.

How to make it

Start with the potatoes

Preheat your oven to 425°F. Pierce the potatoes a few times with a fork, rub them all over with neutral oil, and hit them with a generous amount of salt. Then put them directly on the oven rack or a baking sheet and leave them alone for 45 to 60 minutes, flipping once halfway through. You’re looking for skin that’s visibly crispy and a little wrinkled. When a fork slides in with zero resistance, you’re there. Don’t wrap them in foil. Foil steams the skin soft and that’s not what we’re going for here.

Make the sauce and onions while the potatoes bake

The burger sauce is literally just stirring things together — mayo, drained pickle relish, ketchup, and a little sugar. Done in two minutes. Make it first and stick it in the fridge so the flavors have a chance to hang out.

The onions take the most patience of anything in this recipe. Finely dice one large onion, get a pan going over medium heat with a little neutral oil, and add the onion with salt. Then just let it cook, stirring occasionally, for 15 to 20 minutes. Add water a tablespoon at a time if things start sticking. You want them soft, deeply golden, and a little sweet. Don’t try to rush this on high heat. You’ll just get browned but not caramelized, and it’s not the same thing.

Cook the beef

Get a large skillet going over medium-high heat and melt your butter. Add the ground beef, season with salt and pepper, then stir in the Worcestershire sauce, beef broth, and yellow mustard. Break the beef up as it cooks and let everything simmer together for 6 to 8 minutes until it’s browned through and saucy. Here’s where the key technique comes in:

  • Divide the beef into four portions right in the pan
  • Lay a slice of American cheese over each portion
  • Cover with a lid for about a minute until the cheese is fully melted
  • Remove from heat and you’re ready to build

Put it all together

Slice open your hot potatoes and fluff the inside with a fork. You want it light and a little fluffy, not packed. Add butter, salt, and black pepper right in the cavity while it’s still steaming and give it another mix. Then spoon in the cheesy beef, pile on the caramelized onions, add your pickles and pepperoncinis, hit it with parsley, and drizzle the burger sauce over everything. Don’t be shy with the sauce!

🤎 MAKE IT AHEAD: The beef, caramelized onions, and burger sauce can all be made in advance and reheated when you’re ready. Just bake the potatoes fresh. They’re at their best straight from the oven, and honestly the whole thing comes together in under 15 minutes once those components are done.

They should feel soft when squeezed (use a towel — they’ll be hot) and a fork should slide in with no resistance. The skin will look crisp and slightly wrinkled. If it still feels firm, give it another 5 to 10 minutes.

Can I air fry the potatoes instead?

Yes — air fry at 400°F for about 35 to 45 minutes depending on size, until crispy outside and soft inside.

Can I make the components ahead of time?

Absolutely. The beef, onions, and burger sauce all reheat well. Store them separately and assemble once the potatoes are fresh out of the oven.

Ingredients

BAKED POTATOES
  • 4 large russet potatoes
  • Neutral oil, for coating
  • Salt, to taste
  • Black pepper, to taste (for inside)
  • Butter, for serving
BURGER SAUCE
  • 1/3 cup mayonnaise
  • 4 tablespoons pickle relish, drained
  • 3 tablespoons ketchup
  • 1 teaspoon sugar
CARAMELIZED ONIONS
  • 1 large onion, finely diced
  • 1/2 tablespoon neutral oil
  • 1/4 teaspoon salt
  • 4 tablespoons water, or as needed
GROUND BEEF
  • 1 tablespoon unsalted butter or avocado oil
  • 1 pound 90/10 ground beef
  • 3/4 teaspoon salt, add to taste
  • 1/4 teaspoon black pepper
  • 1/2 tablespoon Worcestershire sauce
  • 1/4 cup beef broth
  • 1 teaspoon yellow mustard
  • 4 slices American cheese
TOPPINGS
  • Dill pickle slices
  • Pepperoncinis, chopped
  • Chopped parsley

Instructions

BAKE THE POTATOES
  1. Preheat oven to 425°F.
  2. Wash and dry the potatoes well, then pierce each one a few times with a fork.
  3. Rub all over with neutral oil and season generously with salt only.
  4. Place directly on a baking sheet or oven rack and bake for about 45 to 60 minutes, flipping halfway through, until the skin is crispy and the inside centeris fork tender.
MAKE THE BURGER SAUCE
  1. In a small bowl, mix together mayonnaise, pickle relish, ketchup, and sugar.
  2. Stir until smooth and set aside.
MAKE THE CARAMELIZED ONIONS
  1. Heat neutral oil in a pan over medium heat.
  2. Add the diced onion and salt, stirring occasionally.
  3. Cook for about 15 to 20 minutes, until soft, golden, and deeply caramelized.
  4. Add water a tablespoon at a time if needed to prevent sticking and to deglaze the pan as they cook down.
  5. Remove from heat.
COOK THE GROUND BEEF
  1. In a large skillet over medium-high heat, melt butter.
  2. Add ground beef and season with salt and pepper.
  3. Stir in Worcestershire sauce, beef broth, and yellow mustard.
  4. Cook, breaking up the beef, for about 6 to 8 minutes until browned and fully cooked.
  5. Divide into portions in the pan, top each with American cheese, and let it melt, about 1 minute. Remove from heat.
ASSEMBLE
  1. Once everything is ready, slice open the hot baked potatoes.
  2. Fluff the inside with a fork and add butter, salt, and black pepper to taste. Mix again.
  3. Spoon the cheesy ground beef into each potato.
  4. Top with caramelized onions, dill pickles, chopped pepperoncinis, and parsley.
  5. Drizzle generously with burger sauce and enjoy warm!
