Crispy Parmesan Roasted Potatoes
Dinner plans just got a bit better AND crispier! Roasted potatoes are already incredible as is but these are taken to the next level with a crispy parmesan layer that is way toooo good. All that’s left to do is serve it with some steak and salad for the perfect meal!

I’ve been seeing these crispy parmesan potatoes all over social media! I guess it’s a trend now and I’ve had this recipe saved for the longest time to make so I guess there’s no better time than now to share.
If you’ve been following me for a while now, you know my obsession with crispy cheese. We’ve done it with fried eggs, dumplings, burritos, quesadillas, and even an omelette so of course potatoes had to be next. The potatoes are baked in the most delicious garlic and herb butter sauce and then dipped in parmesan to roast to crispy perfection. Truly the best way to enjoy potatoes and the only way I will be making them moving forward now. Let’s make it!
What Kind of Potatoes to Use
For roasting potatoes in the oven, you want to use more waxy potatoes that are a lot more creamy and buttery in the center and hold their shape well! My go-to and what I use for this recipe is baby dutch yellow or baby gold potatoes. Yukon Gold also works really well. If you prefer baby red potatoes, you can do that too but they might take a bit longer to cook.
Once you have the right potatoes, just rinse them well to clean the skin. Then slice each potato down the middle to cut into two and that’s it! It yields the perfect size.

Making the Garlic and Herb Sauce
These potatoes are coated in a flavorful garlic and herb butter before going in the oven to roast. It takes five minutes to make and adds so much flavor.
HERE ARE THE INGREDIENTS YOU NEED:
- unsalted butter, melted
- olive oil
- garlic cloves, minced
- parsley, finely chopped
- salt
- black pepper
- oregano
- parmesan, grated
- red pepper flakes
Just add everything to a small bowl, mix together, and it’s ready to go!

Add the potatoes that have been cut in half to a bowl and toss it in the garlic and herb butter sauce.
Transfer to a baking tray and now it’s time to get real cheesy!
The Crispy Cheese
The secret to making the most delicious potatoes is to just go crazy with the parmesan!
Ideally, you want to buy a block of parmesan and grate it yourself. It melts so well and tastes way better than the powdered stuff. After grating the parmesan, add it to a small bowl and now it’s time to cover the potatoes in them.

After tossing the potatoes in the garlic and herb butter, you’ll dunk the flat side of each potato in the parmesan so the whole bottom is covered in parmesan. The side that you sliced down the middle that has no skin on it is the side getting coated in parmesan. Then place it flat on a tray, parmesan side down. This step is optional but if you like them extra cheesy, you can add more grated parmesan on top of the potatoes (on the skin) while they’re in the tray.
Pop in the oven to roast for 30 to 40 minutes at 400°F until the center of each potato is fluffy and soft but the bottom of each potato is golden brown and crispy!
Enjoy with your favorite dipping sauce like ketchup and ranch.

Crispy Parmesan Roasted Potatoes
Ingredients
- 2 pounds baby gold potatoes, rinsed and cut in half
- 1/2 cup parmesan, grated
- 1/4 cup unsalted butter, melted
- 1/4 cup olive oil
- 2 tablespoons parsley, finely chopped
- 1 tablespoon garlic, finely minced
- 3 tablespoons parmesan, grated
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
Instructions
MAKE THE GARLIC BUTTER
- To a small bowl, add the melted butter, parsley, garlic, parmesan, salt, black pepper, and oregano. Mix together and set aside.
PREPARE THE POTATOES AND BAKE
- Preheat the oven to 400°F.
- Rinse the potatoes well to clean and slice each one in half. Transfer to a bowl.
- Add the garlic and herb butter to the bowl and toss the potatoes in until combined well.
- Add the 1/2 cup of grated parmesan to a bowl. Dip each potato so that the flat side with no skin is covered in parmesan. Press down so the parmesan sticks on and transfer to a non-stick tray. Repeat with the rest of the potatoes.
- Pop in the oven to bake for 30 to 40 minutes until the bottoms are golden brown and crispy and the center is cooked through - soft and fluffy.
- Take out of the oven and enjoy with your favorite dipping sauce!
