Savory French Toast
I’m not sure if savory french toast is already a thing but I like to think that this is my mom’s own creation! It’s cozy, crispy, and absolute perfection.

If there’s one thing my mom is adamant about, it’s wasting food (and specifically, bread). Whenever we had leftover baguettes from one too many tuna sandwiches, my mom sliced the loaf up, soaked the pieces in egg, and deep-fried it for the most delicious breakfast side. It was always a treat coming down to find these on a rushed school morning.

Now, I’m taking my time and serving it with roasted balsamic cherry tomatoes, a poached egg, and a za’atar and aleppo pepper olive oil drizzle.

Savory French Toast
Ingredients
- 8 slices day old bread
- 4 eggs
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon minced parsley
- 2 tablespoons parmesan
- 2 minced garlic cloves
- 1/4 cup vegetable oil
Instructions
- In a large bowl, whisk together eggs with salt, pepper, parsley, parmesan, and garlic.
- Over medium heat, add vegetable oil and allow to get hot.
- Coat one slice of bread in the egg mixture and drop into the pan, one at a time.
- Flip over each slice after the other side turns golden - about 2 minutes. Let the other side now turn golden.
- Take off the pan and place on a napkin to suck any excess oil. Serve immediately!
Made these late at night for the fam and it was hit!
