Red Curry Udon Noodle Soup

This red curry udon noodle soup is the ideal comfort food when you’re feeling under the weather or just want a bowl of something cozy and flavorful. Creamy coconut milk, spicy red curry, tender poached chicken, and slurp-worthy udon noodles come together with vibrant veggies and fresh herbs. The best part? It’s easy to make with flexible ingredients and offers plenty of room for creativity. Let’s go over each step, adding all the tips and tricks to make this bowl absolutely perfect.

Building the Flavor Base

The secret to any great soup is a strong, aromatic base. Start by warming a generous splash of coconut oil in a large pot over medium heat. Coconut oil adds a subtle sweetness and extra creaminess that’s perfect for this dish, but any neutral oil like avocado oil will work. Add in a spoonful of minced garlic and ginger paste—freshly minced or jarred is fine, but if you’re a fan of bolder flavors, try grating fresh ginger. As soon as the garlic and ginger hit the oil, they’ll release an incredible fragrance that sets the stage for everything else.

Once the aromatics are softened and starting to brown, stir in a hearty spoonful of red curry paste. This is where the depth and heat of the soup really come from, so let the curry paste cook for just a minute or two, stirring constantly. Cooking it this way enhances the spices in the paste, bringing out its full depth. If you love extra heat, consider adding a dash of crushed red pepper flakes or a little splash of chili oil along with the curry paste. You could swap this for yellow or green curry paste if you prefer one more than the other!

Creating the Creamy Broth

Now it’s time to transform that base into a rich, comforting broth. Pour in a can of coconut milk—it’s what gives the soup its luxurious creaminess. For a thinner soup, you’ll want to add a good amount of broth, either chicken or vegetable or more coconut milk. The broth should be just enough to make it soupy but still keep that creamy consistency. Start with a bit, and you can always add more later if you prefer it soupier.

To balance the flavors, add a dash of fish sauce (don’t worry, it just adds umami without making it taste fishy!) and a squeeze of lime juice. A touch of brown sugar helps round out the flavors, adding just the right hint of sweetness. If you want extra flavor, try adding a couple of kaffir lime leaves or a bit of lemongrass to the broth as it simmers—both add a hint of citrusy aroma that complements the coconut beautifully. Let everything come to a simmer, stirring occasionally to make sure all the flavors meld together.

Poaching the Chicken Perfectly

Poaching chicken in the broth not only makes it tender but also infuses it with flavor. Thinly slice the chicken thighs so they cook quickly and evenly, then drop them right into the simmering broth. As the chicken cooks, it will release some juices, adding even more richness to the soup. You’ll know it’s ready when it’s tender and easy to pull apart with a fork.

For a vegetarian or vegan twist, simply omit the chicken and double up on vegetables. You could also add tofu or a handful of sliced mushrooms for extra texture—just add them at this stage so they can soak up the flavors in the broth.

Adding the Vegetables

Once the chicken is cooked, it’s time for the veggies. Red bell pepper and green beans add a beautiful crunch and color contrast to the creamy broth. If you want to experiment, try swapping in thinly sliced carrots, zucchini, or bok choy. These veggies keep their texture without overcooking, so they add a nice bite to the soup. Stir everything in and let the soup simmer for a few minutes until the vegetables are just tender but still have a little crunch.

If you love greens, a handful of spinach or baby kale added at the end is delicious! They’ll wilt beautifully in the hot broth without overpowering the other flavors.

Finishing with Fresh Herbs and Udon Noodles

With the vegetables tender and the broth rich and fragrant, it’s time to add the final touches. Stir in a handful of chopped Thai basil and cilantro, which add a fresh, herbal aroma that lifts the entire dish. Thai basil has a slightly spicy, anise-like flavor that pairs perfectly with the red curry, but regular basil can work if that’s what you have on hand.

Next, add the cooked udon noodles. These thick, chewy noodles soak up the broth beautifully, giving each bite a satisfying texture. If you don’t have udon noodles, rice noodles or ramen noodles are a great substitute. Simply cook the noodles separately and add them just before serving, so they don’t get too soft.

Serving and Enjoying Your Soup

Once the noodles are heated through, taste the soup and adjust any seasonings if needed. Add a little extra lime juice for brightness or a pinch of salt if you’d like. Ladle the soup into bowls, making sure to get a good mix of chicken, noodles, and veggies in each one. Garnish with a few more leaves of basil or cilantro, a sprinkle of chili flakes for heat, and maybe even a drizzle of chili oil if you love it extra spicy.

For added texture, serve with a side of crispy garlic chips or crushed peanuts—they add a wonderful crunch that complements the creamy broth.

Tips for Leftovers, Make-Ahead, and Storage

This soup is best enjoyed fresh, but leftovers can be just as delicious! If you’re planning on making it ahead, consider storing the broth, vegetables, and noodles separately. This way, the noodles won’t soak up too much broth and get soggy. When you’re ready to eat, just reheat the broth and add the noodles right before serving.

Store any leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on the stovetop, adding a splash of broth or coconut milk if it’s thickened up. The flavors tend to deepen as it sits, making it even more flavorful the next day!

If you want to freeze the soup, hold off on adding the noodles until after reheating, as they don’t freeze well and can become mushy. Just freeze the broth, chicken, and veggies, and then cook fresh noodles to add after reheating.

A fantastic recipe! Did two cups of chicken broth for a bigger pot of soup. Added some mushrooms once all was combined and cooked together for added flavour and it softened in the pot. Killed it again Hajar!

Made this for girls night and was an absolute hit!

made the broth on the thicker side and left out the chili flakes, as red Thai Curry Paste is already spicy enough. The udon makes it such an enjoyable texture!

definitely going in the rotation this winter season

Delicious and fast recipe, easy dinner for a busy weeknight.

Tastes like restaurant quality! Very impressed
