Chicken Alfredo Lasagna Soup
If you’ve ever wished chicken Alfredo could be a soup, your dreams just came true. This Chicken Alfredo Lasagna Soup is everything cozy — creamy, garlicky, and packed with flavor. Every spoonful has tender chicken, rich broth, and noodles that soak up all that Alfredo goodness. It’s warm, comforting, and perfect for those nights when you want something that feels indulgent but is still easy to make.

The traditional Lasagna Soup is one of the most popular and loved recipes on the blog, and for good reason — it’s cozy, hearty, and pure comfort in a bowl. But since it’s officially cozy season, I wanted to make a twist on that classic. This version takes all the same lasagna vibes and gives them a creamy Alfredo spin but just as rich, cheesy, and satisfying.
Why You’ll Love This Recipe
- All the Alfredo flavor, none of the fuss. Everything you love about creamy pasta, made in one pot.
- Customize it your way. Go thicker and creamier, or lighter and more brothy — both are delicious.
- Perfect for cozy nights in. It’s the ultimate comfort meal when the weather cools down.
- Meal prep friendly. The flavors get even better the next day, and it reheats beautifully.
Ingredients You’ll Need
The Chicken:
We’re using boneless, skinless chicken breasts — they cook quickly and stay juicy once chopped. Toss them in olive oil, Italian seasoning, lemon pepper, smoked paprika, garlic powder, salt, and black pepper for flavor that seeps into every bite.
Shortcut: If you’re short on time, rotisserie chicken works perfectly here! Just skip the marinating and add it in near the end when the cheese goes in.
Moribyan Tip: If you want to save time, air fry the chicken at 400°F for 8 to 10 minutes per side — just as juicy, no mess.
The Creamy Base:
This is where the magic happens — that rich, silky texture that makes every bite so cozy. You’ll melt butter and sauté garlic until fragrant, then pour in your chicken broth.
Then for creaminess, you can use half and half, heavy cream, or milk — it’s totally up to you.
- For a thicker and richer soup, go with heavy cream with milk.
- For a lighter, thinner version, use more milk or half and half in place of heavy cream.
You don’t need a blend — whatever you have on hand works.
The Noodles:
Instead of boiling them separately, break up lasagna sheets into smaller pieces (they don’t need to be perfect!) and let them cook right in the soup. They’ll soak up all that creamy flavor and turn perfectly silky in about 12 to 14 minutes.
The Cheese & Herbs:
A mix of parmesan and mozzarella gives that signature Alfredo creaminess, while fresh basil and parsley brighten everything up. I always say don’t skip the fresh herbs — they balance the richness perfectly.
How to Make It
1. Marinate & Cook the Chicken
Whisk together olive oil and your seasonings, then toss the chicken until evenly coated. Sear in a large pot until golden brown on both sides and cooked through, about 5 to 6 minutes per side. Let it cool slightly before chopping into bite-sized chunks.
If using rotisserie chicken, just skip this step and add it later when combining everything together.
2. Build the Soup Base
In the same pot, melt butter and sauté minced garlic for about a minute until it smells incredible. Pour in your broth and choice of milk, half and half, or cream. Add Italian herbs, oregano, salt, black pepper, nutmeg, dried mustard, and cayenne. Let everything come to a gentle simmer over low-medium heat so the flavors infuse.
3. Cook the Noodles
Drop in the broken lasagna sheets and stir occasionally so they don’t stick together. Let them cook for about 12 to 14 minutes until tender and silky.
4. Bring It All Together
Add the cooked (or rotisserie) chicken back to the pot along with parmesan, mozzarella, parsley, and basil. Stir until the cheeses melt and the soup turns creamy and velvety. Taste and adjust salt or pepper as needed.
5. Optional Hack for a Thicker Soup
If you like it extra creamy, ladle out about 1 cup of the soup into a bowl, whisk in a spoonful of flour, and stir it back in until slightly thickened.
Tips & Variations
- Add veggies: Spinach, broccoli, or mushrooms all pair beautifully with this soup.
- Extra cheesy: Sprinkle mozzarella on top and broil for 1 to 2 minutes until bubbly and golden.
- Lighter option: Use milk only and add a squeeze of lemon juice at the end for brightness.
- Pasta swap: Try bowties, broken fettuccine, or even cheese tortellini for a fun twist.
Storing & Reheating
Let the soup cool before storing it in an airtight container. It’ll keep for up to 4 days in the fridge. For best results, store noodles separately if you can — that way they don’t soak up too much broth. When reheating, add a splash of milk or broth to bring it back to that silky, creamy texture.

Tips & Notes
Q: Can I use rotisserie chicken?
A: Yes! Shredded rotisserie chicken works perfectly and cuts down prep time.
Q: Can I make this ahead?
A: For best results, store the soup and noodles separately. Combine before reheating to keep the noodles from soaking up too much broth.
Q: Can I use other pasta shapes?
A: Absolutely. Bowtie, broken fettuccine, or any wide noodles work great if you don’t have lasagna sheets.
