Philly Cheesesteak Tacos
I lived in Philly for two years and just recently moved, but one thing I’ll never forget is the food scene—so underrated and so good. The Philly cheesesteak in particular totally won me over. There’s nothing like grabbing a hot, cheesy sandwich loaded with shaved steak and caramelized onions, especially after a long day. So this recipe is my little dedication to that time in my life. I took all the flavors I loved in the classic and gave it a twist—crispy tortillas, melty cheese, and golden edges that take it to the next level. It’s not a taco, it’s not the original sandwich—it’s the perfect fusion of both.

What Kind of Steak to Use
The key to making a great cheesesteak taco is thinly shaved steak. If your grocery store carries it already prepped, grab it—it’s sometimes labeled as “shaved beef” or “Philly steak.” You can usually find it near the pre-sliced meats or ask the butcher directly. But if you can’t find it, don’t worry—it’s easy to do at home. Just take a ribeye or sirloin, pop it in the freezer for about 30 minutes to firm it up, and then slice it super thin against the grain with a sharp knife. The thinner the better, because it cooks fast and stays tender and juicy.
How to Cook the Filling
Start by sautéing your veggies. I go for diced yellow onion and thinly sliced green bell pepper—classic cheesesteak vibes. Add a little oil to a hot pan and sauté them with a pinch of salt and black pepper until soft and golden, which takes about six to eight minutes. Right at the end, stir in some minced garlic and let that cook for another minute or two just until fragrant. Then remove everything from the pan and set it aside while you work on the steak.
In the same pan, melt a little butter with a splash of oil. Add the shaved steak in an even layer and let it cook without stirring for a couple of minutes to get a good sear. Once it starts to brown, break it up and season with salt, black pepper, paprika, and a bit of mustard powder. Then pour in a splash of Worcestershire sauce and a little beef broth to give it that rich, savory flavor. Let it simmer for a few minutes until the liquid reduces and coats the meat. Once your filling is ready, it’s time to build the tacos! Grab your tortillas—flour works best here because they get perfectly crispy. Lay them out and sprinkle some shredded cheese on one half of each tortilla. Add a generous scoop of the steak and veggie filling, then more cheese on top. Fold the tortilla over like a quesadilla and press gently to help it stick.
Heat a clean pan with just a little oil and toast the tacos on each side for about two to three minutes until golden brown and crispy. Press them down slightly with a spatula while they cook so they seal and get that satisfying crunch. Once the cheese is melty and the outside is golden, you’re ready to serve.
Variations to Try
These tacos are super versatile, and you can definitely make them your own depending on what you’re craving or what you have in your kitchen. Here are some fun twists to try:
- Add mushrooms: Sauté sliced cremini or button mushrooms along with the onions and peppers for even more flavor and texture.
- Spice it up: Add in some hot cherry peppers or banana peppers for heat and tang after cooking the tacos.
- Try different cheeses: Monterey Jack melts beautifully, but Cooper Sharp gives that classic Philly flavor. American cheese is super creamy, and pepper jack adds a little heat.
- Switch the tortillas: Flour tortillas get super crispy, but you can use corn tortillas for a different flavor or to be gluten free. Just keep in mind, Worcestershire sauce is NOT gluten free.
- Sauce it up: Serve with chipotle mayo, garlic aioli, spicy ranch, or any dip you like.
Tips for the Best Results
Thin steak is key, so don’t skip that freezing trick if you’re slicing it yourself. When you’re cooking the steak, give it time to brown undisturbed—it builds so much flavor. Don’t overcrowd the pan, and be sure to toast the tacos right before serving so they stay crisp. You can also keep finished tacos warm in the oven if you’re making a big batch. And if you have leftovers, store the filling separately from the tortillas and re-toast fresh the next day for the best texture.

Philly Cheesesteak Tacos
Ingredients
STEAK- 1 pound thinly shaved steak
- 1 tablespoon unsalted butter
- 1 tablespoon neutral oil
- 1/2 to 3/4 teaspoon salt
- 1 teaspoon paprika
- 1/2 teaspoon mustard powder
- 1/4 teaspoon black pepper
- 1 tablespoon Worcestershire sauce
- 1/4 cup beef broth
- 1/2 large yellow onion, sliced or chopped
- 1 green bell pepper, thinly sliced
- 1 tablespoon neutral oil
- salt, to taste
- black pepper, to taste
- 1/2 tablespoon minced garlic
- 8 flour or corn soft tortillas (taco size)
- 1 1/2 cups shredded Monterrey Jack cheese, or any cheese of choice
- neutral oil, for toasting tacos
Instructions
- Cook the Veggies: In a pan over medium heat, add oil and sauté the diced onion and sliced bell pepper. Season with salt and black pepper. Cook for about 6 to 8 minutes, until the onions are soft and translucent and the peppers are tender. Stir in the minced garlic and cook for 1 to 2 more minutes, then remove from the pan and set aside.
- Cook the Steak: In the same pan, heat the butter and oil over medium to medium-high heat. Add the shaved steak and let it sear undisturbed for about 2 minutes to get some browning. Then season with salt, paprika, mustard powder, and black pepper. Stir in Worcestershire sauce and beef broth, and cook for another 3 to 5 minutes, until the liquid reduces and the steak is juicy and tender. Turn off the heat and stir the veggies back in.
- Assemble the Tacos: On each tortilla, sprinkle some cheese on one half, add a scoop of the steak and veggie mixture, and top with a little more cheese. Fold over the tortilla to close.
- Toast the Tacos: Heat a pan or griddle over medium heat with a light coating of oil. Toast each taco for about 2 to 3 minutes per side, or until golden, crispy, and the cheese is fully melted.
