Chili Mac
If you’re on the hunt for a cozy, satisfying meal that brings together the comforting vibes of pasta and the bold flavors of chili, you’re in the right place! This chili mac recipe is a delightful twist on the classic, perfect for chilly evenings or whenever you need a little extra comfort. Plus, it’s incredibly easy to whip up, making it a great go-to for busy nights. So, let’s dive into how to create this heartwarming dish all in one pot!

Cooking Instructions
Let’s kick things off by heating some olive oil in a large pot over medium heat. As the oil warms up, it’s time to add in your diced red bell pepper, jalapeño, and onion. Sauté these colorful veggies until they soften and become fragrant—this step is so essential! It builds a fantastic flavor base for your chili mac. Once those beauties are looking good, stir in some minced garlic and let it cook for an extra minute. Trust me; your kitchen will start smelling amazing!
Next up, let’s bring in the star of the show—our ground beef! Toss it into the pot and break it apart as it cooks, letting it brown until it’s no longer pink. This is where the magic happens! The savory aroma of the beef mingling with those veggies will have everyone in the house wondering what’s cooking.
Now, let’s crank up the flavor! Add in a mix of these spices: chili powder, smoked paprika, cumin, coriander, oregano, salt, black pepper, onion powder, and just a pinch of cayenne for a kick. Go ahead and adjust the spices to suit your taste—this dish is all about making it your own! Stir everything together and let those spices cook for a minute to really bring out their full flavor.
Once your kitchen is filled with that heavenly scent, it’s time to pour in the beef broth. Don’t forget to add in some light brown sugar, a can of fire-roasted diced tomatoes, a can of tomato sauce, and a splash of Worcestershire sauce. Let it all simmer together for about 10 minutes. This is when the flavors meld beautifully, and you’ll start to see the magic happen in the pot!
Now comes the fun part! Stir in the rinsed and drained kidney beans along with some uncooked elbow pasta. Cover the pot and let it cook, stirring occasionally, until the pasta is tender and has soaked up most of the delicious liquid. Keep an eye on it and enjoy the aroma wafting through your kitchen.
When the pasta is cooked to perfection, it’s time to add the finishing touches. Fold in some freshly chopped cilantro and a generous handful of shredded cheddar cheese. Stir it all together until that cheese melts into gooey, cheesy goodness. Feel free to go as heavy or light as you want with the cheese. Serve while nice and hot with more cheese on top, a dollop of sour cream, and some freshly chopped scallions to enjoy!
Tips & Variations
Now that you’ve got the basics down, feel free to get creative! Want to add more veggies? Go for it! Zucchini, corn, or even some spinach can elevate your chili mac and make it even heartier. If you’re a spice lover, don’t be shy—throw in extra jalapeños or a splash of hot sauce to kick things up a notch.
For a creamier version, you can mix in a dollop of sour cream or a splash of heavy cream into the pot at the end. It adds a luscious texture that you’ll love! And if you’re short on time, don’t sweat it! You can prepare the beef and veggie mixture ahead of time, store it in the fridge, and then reheat it when you’re ready to cook the pasta. Talk about a lifesaver!
Leftovers & Storage
If you find yourself with leftovers (which is a rarity because it’s just that good), no worries! Store them in an airtight container in the refrigerator, and they’ll stay fresh for a few days. In fact, the flavors often deepen overnight, making it even more delicious the next day! When you’re ready to enjoy it again, just reheat on the stove or in the microwave. If it looks a little dry, add a splash of broth to revive it.
Oh, and this chili mac freezes beautifully! Just let it cool completely, then transfer it to freezer-safe containers. When you’re ready for a cozy meal again, simply thaw it in the fridge overnight and reheat it on the stovetop or in the microwave. Easy peasy!
And there you have it—an easy, comforting chili mac recipe that’s sure to warm your heart and satisfy your cravings! This dish is perfect for family dinners or cozy nights in so gather your loved ones and Happy cooking!

I can stop eating it from the pot. I fear it’s not going to make it to the bowl. It’s absolutely delicious!
LOVED IT!!! I made a mistake adding my seasonings so I added a little more sugar to compensate (I can’t take the heat lol), but it was STILL amazing!!!
A wonderful recipe! My husband and I both really enjoyed it 😋. Will defo be making it again!
This was amazing and very easy to make! It is soooo addicting, me and my family couldn’t stop easting it. I made it to my personal preference which is to add an extra 1/2 tbs of light brown sugar, one 15oz can of corn, and one full cup a cheese. Just like the previous ratings, this is definitely something I will make again!
