For the sauces, I purchased these off Amazon from Nando’s. They also sell them at my local grocery store so you can check there as well. You can use any flavor or spice level you like in this recipe. I like using medium – it’s not too spicy but has a small kick!

Ingredients

PERI PERI CHICKEN

  • 1.5 pounds chicken thighs boneless and skinless
  • 1 to 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1 teaspoon salt
  • medium peri peri sauce

SPICY RICE

  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 whole red bell pepper chopped
  • 1/2 yellow onion chopped
  • 2 teaspoons minced garlic
  • 1 tablespoon tomato paste
  • 1 1/2 cup basmati rice
  • 2 1/4 cups chicken stock
  • 2 teaspoons chili powder
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • 1/2 teaspoon salt more to taste
  • 1/2 teaspoon oregano
  • 1/2 to 1 teaspoon red pepper chili flakes optional
  • 1 cup peas cooked
  • 1 to 2 tablespoons cilantro chopped

Instructions

MARINADE THE CHICKEN

  1. Add the olive oil, chili powder, garlic, black pepper, paprika, cumin, and salt to the chicken. Mix to evenly coat the chicken thighs.

COOK THE CHICKEN

  1. Add a drizzle of vegetable or olive oil to a pan over medium-high heat. Add the chicken thighs and spread evenly apart. Once it’s hot, add a drizzle of oil to the pan. Add the chicken in, making sure not to crowd them. Cook in two batches if needed. Once golden brown on one side, about 5 to 6 minutes, flip over. Brush the chicken thighs with peri peri sauce. Allow the other side to get golden brown, about 6 minutes. Then drop the heat to low and cook for 1 to 2 more minutes or until the chicken is cooked through to the center. Take off the heat and you can brush again with more peri peri sauce.

COOK THE RICE

  1. Wash your rice really well until the water runs clear. In a large pan, add the olive oil and butter over medium high heat.
  2. Add the red bell pepper, onion, minced garlic, and tomato paste. Saute for 3-4 minutes and then add the rice and toast it for about 3 minutes until fragrant.
  3. Add the chicken stock, chili powder, paprika, turmeric, salt, oregano, and chili flakes. Mix together and bring to a boil. Then lower the heat to simmer, cover, and cook for about 11-12 minutes. Turn off the heat but leave covered for 10 minutes.
  4. After 10 minutes, take off the lid and fluff with a fork. Add the peas and chopped cilantro. Mix again. Top with the cooked chicken and enjoy!

Tried this for dinner – it was a hit!! Just note that if your spice tolerance is low (like me) then this recipe is quite spicy. I would recommend reducing the amount of chilli powder you add to the chicken marination and the rice.

Before I could print these beautiful recipes. It’s so much better and easy for me to read while cooking. Why can’t I no longer print them? Is there a way you could do it again? 😊

So the flavor was GOOD but i hated cooking the rice in the pan like that… i always use a rice cooker so my question is… after i toast the rice could i transpose everything to my rice cooker and finish it off that way??? Thanks ❤️

I hate when people applaud recipes and give a five star review, comment how delicious something was and then continue to pick apart the recipe and state how instead of chicken they used pork, and added other ingredients and omitted others. Basically they didn’t make the original recipe at all! That being said, I couldn’t find peri peri sauce in time. I did everything else to the letter and it was delicious. Next time I will double the rice because it was magnificent. Thank you for this delicious recipe, it’s going in the rotation.

We don’t have Nando’s in my area of the Midwest, sadly. But we did have their sauce in thr grocery store and so I made this. It’s delicious! It was a big hit with my teenagers and husband. I just put the cooked thighs in a warm oven and used the same pan to do the rice. It was perfect, thanks so much!

Absolutely delicious combo! This is the best pairing since peanut butter and jelly!! The chicken is delicious but when you pair it with that rice it’s amazing. Great recipe. I made the rice in my Instant Pot and then cooked the chicken as it started to finish. I was out of tumeric so used 1/2 teaspoon of mustard powder. It came out great. The recipe has spiciness but not too spicy. I ate it for Dinner, Dinner, lunch in that order. 👍🏾👍🏾🇿🇦

This was so good!!! I ended up baking the chicken at 400F for 30 minutes because I knew I would need to cook the chicken in at least 2 batches if I cooked it on the stovetop. Turned out great!
I did need to as more salt to the rice once it was done and I could taste it, but that was not a problem. Try this recipe!
