I kept thinking, what’s a creative flavor pairing that still feels comforting and unique? Then it hit me — what if I took the famous Buldak Carbonara flavors and turned them into a broth? After a lot of ingredient research and testing, it somehow tasted spot on. It’s creamy, savory, and just the right amount of spicy — enough to warm you up without overpowering the rest of the dish.

CHICKEN

BROTH
  • 3 tablespoons unsalted butter
  • 1 tablespoon minced garlic
  • 3 tablespoons gochujang
  • 1 cup half and half
  • ¾ cup whole milk
  • 1 large chicken bouillon cube
  • ½ tablespoon low sodium soy sauce
  • 2 teaspoons paprika
  • 1 teaspoon sugar
  • ½ teaspoon onion powder
  • ¾ to 1 teaspoon chili flakes, to taste
  • Freshly grated parmesan cheese, optional
FOR SERVING
  • Cooked jasmine rice
  • Sliced green onions, for garnish

  2. Stir in gochujang and let it cook for 1 to 2 minutes to deepen the flavor.
  3. Pour in half and half and milk, then add the bouillon cube, soy sauce, paprika, sugar, onion powder, and chili flakes.
  4. Let the broth gently simmer for 5 to 7 minutes, stirring often, until slightly thickened and creamy.
ASSEMBLE:
  1. Spoon warm jasmine rice into bowls.
  2. Pour the spicy, creamy broth over the rice.

Q: Can I use chicken breast instead of thighs?
A: Yes, but be careful not to overcook — thighs stay juicier and soak up the glaze better.

Q: Is the broth very spicy?
A: It has a kick from the gochujang and chili flakes, but you can easily adjust the spice level to your liking. It is not even a quarter of the spiciness that the traditional buldak ramen has, just the same flavor.

O.M.G. My only note is that I, personally, go heavy on the scallions. Gives it a really delightful pop of brightness. Delicious. Easily top 10. Immediately into rotation. Bravo. Wow.

This is so good!!! The sauce is spicy and versatile. We split it up and tried it with both rice and ramen.. both are scrumptious! The chicken was easy and turned out great too.

This is sooo good! I’ve actually made it a few times with salmon instead of the chicken and it turned out amazing. I also have made this with rice noodles and left over rotisserie chicken and everytime it comes out great. Just the right level of spicy —and she’s right it is not even close to the same spice level as the ramen. The flavors all pair so well together.

This was delicious! I used breast instead of thighs and heavy cream/2% milk combo, but I don’t think it impacted the outcome at all! Comes off a tad sweet at first, but as you keep eating the heat comes in and balances everything out. Defo a keeper!
