Keema
Although I love Shakshuka, Keema might just be one step up from it even though I’ll also argue at the same time that they can’t be put in the same group together. Keema is a popular breakfast dish in Libya and to sum it up, it’s eggs baked in hearty ground beef.

Usually we only have this on the weekends on rare occasions because starting your morning off with red meat is not always the healthiest option. Even back home in Libya, my dad remembers this dish as something very special because it was hard to come by BOTH eggs and ground beef. These ingredients that are pretty standard in the American diet had hefty price tags and weren’t in surplus when my dad was growing up.

We love to serve it with ftat which is a traditional Libyan flatbread (recipe coming soon!), but pita bread works just as well. Let me know in the comments, do you like Shakshuka or Keema more?

Ingredients
- 5 eggs
- 1 pound 85-90% lean ground beef
- 1 tablespoon olive oil
- 1/4 cup diced red onion
- 3 minced garlic cloves
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon ginger
- 1/2 teaspoon oregano
- 3/4 teaspoon salt
- 1/4 teaspoon cayenne
- 1/4 cup tomato sauce
- 2 tablespoons chopped cilantro
Instructions
- In a skillet or pan over medium-high heat, heat one tablespoon of olive oil,. Add red onions and garlic and cook for 2-3 minutes, until onions are translucent.
- Add the ground beef and spices. Continuously mash using a spatula to make sure the beef is broken up. Once the beef is all ground up and almost cooked, add the tomato sauce and cilantro. Bring to a simmer on lowest heat for 5 minutes.
- Bring heat back up to medium. Make 5 wells in the ground beef mixture and drop 1 egg in each well. Allow to cook for 8 to 9 minutes - just until the whites are cooked and the yolk is still runny but set.
- Garnish with fresh cilantro and serve with bread, cheese, and potatoes for the ultimate breakfast spread.
