Homemade Spaghetti O’s

If you grew up loving those little pasta rings in tomato sauce, you know there’s something magically nostalgic about Spaghetti O’s. But honestly? The canned version can feel a little sad compared to what homemade can be. So I set out to recreate that comforting bowl with fresh ingredients, deeper flavors, and a creamy texture that makes you want to savor every bite. The best part? It’s easy enough for any weeknight, but tastes like a dish you’d order at a cozy Italian spot.

This recipe cooks the anellini pasta right in the sauce — no separate boiling required. That means the pasta soaks up all the garlicky, tomatoey, herb-filled goodness as the sauce thickens around it into a silky, luscious base. A splash of heavy cream and a good handful of parmesan take it from simple to indulgent, creating that dreamy, velvety texture you didn’t know you needed.

This recipe is surprisingly simple and comes together in about 30 minutes, making it perfect for busy weeknights when you want something comforting but elevated. The balance of herbs, spices, and fresh basil keeps it bright and flavorful, and the gentle heat from red pepper flakes gives it just enough kick without stealing the show.

Where to Find Anellini Pasta

Anellini pasta is the tiny, ring-shaped pasta that makes this dish so fun and nostalgic. It’s not always easy to find in your average grocery store, but specialty Italian markets often carry it. If you want to save time hunting, you can order it online from places like Amazon — here’s a link so you can get it delivered straight to your door without any hassle.

If you can’t find anellini, small pasta shapes like ditalini or tiny shells can work in a pinch.

How to Make It

Start by heating butter and olive oil in a large pot. When the fat’s shimmering, toss in minced garlic and sauté it for about a minute — just until you can smell that gorgeous aroma filling your kitchen. Then, add the tomato paste. This step is crucial: let it cook for a few minutes, stirring often, so it caramelizes and deepens in flavor. That richness is what sets the sauce apart from the canned stuff.

Next, pour in the chicken broth, crushed tomatoes, and heavy cream. Stir to combine everything into a silky sauce. Now add your Italian seasoning, oregano, paprika, a pinch or two of red pepper flakes (adjust depending on how much heat you want), salt, black pepper, and sugar. The sugar balances the acidity of the tomatoes, and the red pepper flakes adds a pop that keeps the sauce lively.

Bring the sauce to a boil, then stir in the dry anellini pasta. Reduce heat to a gentle simmer and let it cook uncovered for about 15 minutes, give or take a few minutes. Stir often to keep the pasta from sticking to the bottom and make sure it cooks evenly in the sauce. As the pasta cooks, the sauce thickens and clings to every little ring. Make sure to keep cooking until you taste the pasta and it’s cooked to your liking.

When the pasta is tender and the sauce has thickened, stir in a generous handful of parmesan cheese and freshly chopped basil. until it melts into the sauce, making it rich and creamy. Taste and adjust seasoning if needed.

Protein Add-Ins and Toppings

If you want to turn this into a meal that’s more balanced, browned ground beef or mini meatballs are perfect additions — cook them separately and stir them into the sauce before adding the pasta for a hearty upgrade.

But let’s talk toppings — the dollop of burrata filling on top is the ultimate finishing touch. It adds a creamy richness that really adultifies a childhood classic dish. If you want to switch it up or add more protein, cottage cheese makes a fantastic creamy substitute that complements the tomato sauce beautifully. I also like to add a drizzle of olive oil and a sprinkle of parmesan.

Serving Suggestions and Variations

Serve this Spaghetti O’s straight from the pot, topped with a drizzle of good-quality olive oil and extra parmesan cheese. For a bit of crunch, sprinkle toasted breadcrumbs or toasted pine nuts over the top — it adds a lovely texture contrast.

If you want a spicy kick, add more red pepper flakes on top of each bowl. For a herby twist, sprinkle chopped fresh parsley or more fresh basil on top.

Leftovers and Storage

This dish keeps so well that leftovers actually get better over time. I ate mine for three days straight, and the flavors just kept deepening and melding together. Store leftovers in an airtight container in the fridge for up to 4 days.

This homemade Spaghetti O’s is proof that nostalgia and sophistication can live happily together in one bowl. It’s a simple recipe with fresh ingredients that turns a childhood classic into something truly special. Perfect for cozy nights in, weeknight dinners, or when you want comfort food with a trip down nostalgia lane.

Ingredients

PASTA
  • 12 ounces anellini pasta
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 1 tablespoon minced garlic
  • 3 tablespoons tomato paste
  • 3 ½ to 4 cups low sodium chicken broth
  • 1 cup crushed tomatoes
  • ⅓ cup heavy cream
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 1 teaspoon salt (or to taste)
  • ½ to 1 teaspoon red pepper flakes, to taste
  • ½ teaspoon oregano
  • ½ teaspoon black pepper
  • 1 ½ teaspoons granulated sugar
  • ½ cup grated parmesan cheese
  • 3 to 4 fresh basil leaves, thinly chopped
OPTIONAL TOPPINGS
  • drizzle of olive oil
  • dollop of burrata
  • extra parmesan cheese

Instructions

  1. In a large pot over medium heat, melt the butter with the olive oil. Once hot, add the garlic and sauté for about 1 minute until fragrant.
  2. Stir in the tomato paste and cook for 2 to 3 minutes until it darkens in color and smells rich and concentrated.
  3. Pour in the chicken broth, crushed tomatoes, and heavy cream. Stir until everything is well combined.
  4. Add the Italian seasoning, red pepper flakes, oregano, paprika, salt, pepper, sugar, and chiffonaded basil. Stir everything together.
  5. Stir in the dry anellini pasta and bring the pot to a boil. Once boiling, reduce the heat to medium-low and let it simmer uncovered for about 12 to 15 minutes, stirring often so the pasta doesn’t stick, until the pasta is tender and the sauce is slightly thickened. If the pasta needs more time to cook and has thickened too much, add more broth as needed - I used the full 4 cups.
  6. Once the pasta is cooked through and the sauce has thickened, stir in the parmesan cheese until it melts into the sauce and everything is creamy.
  7. Spoon into bowls and top with a drizzle of olive oil, a dollop of burrata, and more parmesan if you’d like.
