My absolute favorite thing to do in the kitchen is combine the unique flavors, beautiful ingredients, and delicate aromatic spices of North Africa and the Mediterranean into a dish you wouldn’t even think of. We’ve all seen chicken wings done with buffalo sauce, honey BBQ, and parmesan garlic. The classics are amazing but sometimes they just need to be reinvented — introduced to another side of the world.

Parmesan garlic is a classic wing combo but we’re elevating it with zaatar. If you’re not familiar with zaatar, it is an herb and spice mixture that is usually made up of thyme, oregano, sesame seeds, sumac, and salt. It really packs a zesty punch, making it a perfect addition to this recipe.

The wings are completed with a refreshing yogurt dipping sauce — elegantly flavored with fresh herbs like dill and mint.

Ingredients

  • 2 pounds chicken wings
  • 1/4 cup olive oil
  • 1/4 cup parmesan
  • 1 tablespoon zaatar
  • 1/2 lemon, juice
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3/4 cup plain full-fat greek yogurt
  • 1 tablespoon mayo
  • 1 tablespoon tahini
  • 1/2 lemon, juice
  • 1 tablespoon fresh dill
  • 1/2 teaspoon fresh mint
  • 1/2 teaspoon fresh garlic, minced
  • salt and pepper to taste

Instructions

  1. Preheat oven to 400F.
  2. Coat chicken wings in olive oil and lemon juice and set aside.
  3. In a small bowl, mix parmesan, zaatar, dried parsley, salt, and black pepper.
  4. Coat the wings evenly in the dry seasoning.
  5. Transfer the wings onto a baking pan with parchment paper and bake until cooked full through and slightly browned — about 40 minutes.
  6. While the wings bake, make your dipping sauce by combining yogurt, mayo, tahini, lemon juice, dill, mint, garlic, and salt and pepper.
  7. Serve your wings with the dipping sauce as an option on the side — delicious with or without!
