The Garlic Butter

The first step is to prepare the garlic butter which is nothing fancy. It’s the perfect garlic butter recipe that is not only good for these skewers but even garlic bread, steak, fries, or chicken wings! Here’s everything you will need:

Quality ingredients make a big difference in this recipe. As I get older, I find myself reaching for the same products my mom always had stocked in the kitchen growing up. There was always Challenge Butter in our fridge so I literally learned how to cook and bake with this butter. I love that it is made from the freshest milk and cream from cows at family-owned dairies. It adds such a rich flavor to these skewers!

Just add all the ingredients above to a small bowl, mix together, and it’s ready to go! Feel free to go stronger on the garlic if you can’t get enough. If it sets/hardens by the time the skewers are cooked, pop it back in the microwave for 30 seconds to make it a brushable liquid.

If you want these skewers to have a bit of a kick, you can also add some red pepper flakes. If you like a more tangy taste, add a bit of lemon zest or lemon pepper to the mix!

Marinating the Chicken

We will keep the marinade for the chicken super simple since most of the flavor will be from the garlic parmesan butter. You still have to season your chicken though but without overpowering the garlic and herb flavor. Here is what we’ll use for the marination:

  • olive or avocado oil
  • yellow mustard
  • Italian seasoning
  • lemon pepper
  • paprika
  • black pepper
  • salt

Add everything to the chicken and mix together well.

NOTE: I used boneless skinless chicken thighs that were diced into individual pieces. Chicken thighs turn out extra juicy but you can definitely use breast if that is your preference.

Airfrying The Skewers

After marinating, thread the chicken onto wooden or metal skewers. If using wooden skewers, make sure to soak them for at least 30 minutes before adding the chicken so they don’t burn. This recipe makes about 4 to 6 skewers depending on how much you fill them in. 

TIP: Whatever skewers you use, just make sure they fit in your air fryer first. 

If your air fryer requires preheating, set it to 425°F. Spray the surface if necessary and add the skewers in. Air fry for about 6 to 8 minutes or until golden and charred on top and then rotate. Air fry for another 6 to 8 minutes! And that’s it, you have chicken skewers in 15 to 16 minutes all in the air fryer.

TOOLS I USED TO MAKE THIS

The first tool I used for this recipe is my air fryer! I’ve been using and loving the Our Place Wonder Oven. It cooks everything so quickly and gets foods so crispy and golden. It’s my favorite kitchen appliance at the moment!

For the metal skewers I used, they were purchased on Amazon here. They are 8 inches long which is the perfect length for my air fryer. Just be careful because they do get really hot!

Ingredients

CHICKEN SKEWERS
  • 1.5 pounds chicken thighs, boneless and skinless, chopped into small pieces
  • 1 to 2 tablespoons olive or avocado oil
  • 1/2 tablespoon yellow mustard or 1 teaspoon dried mustard powder
  • 1 1/2 teaspoon lemon pepper
  • 1 1/2 teaspoon paprika
  • 1 1/2 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
GARLIC BUTTER
  • 1/2 cup Challenge Unsalted Butter, melted
  • 2 tablespoons parsley, finely chopped
  • 1 tablespoon minced garlic
  • 3 tablespoons grated parmesan
  • 1/2 to 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano

Instructions

  1. In a small bowl, mix butter with parsley, garlic, parmesan, salt, black pepper, and oregano.
  2. To a bowl, add the chicken along with mustard, lemon pepper, paprika, Italian seasoning, salt, garlic powder, onion powder, and black pepper. Mix together well.
  3. After marinating, thread the chicken pieces onto skewers. If using wooden skewers, make sure they have soaked in water for 30 minutes to prevent them from burning. I like to add about 6 to 7 pieces onto each skewer.
  4. Add the skewers to the air fryer and air fry for about 6 to 8 minutes at 425°F. Rotate the skewers and air fry again for about 6 to 8 minutes so both sides are golden.
  5. Then take it out of the air fryer and brush with garlic butter.
  6. Serve warm with ranch!
