Feta-Crusted Chipotle Tacos

Greek food meets Mexican food in this fusion recipe combining the flavors of both cuisines into one taco! We all know and love parmesan-crusted tortillas but what about a crispy feta crust? It’s salty and tangy and pairs so well with the flavors of chipotle chicken!

The only thing better than a classic taco is one that surprises your taste buds with unexpected flavors and textures. That’s why I’m thrilled to share my latest taco creation: Feta-Crusted Chipotle Chicken Tacos! I know we all remember that viral trend that went around on TikTok of the feta crusted eggs. I took inspiraton from that to turn it into tacos. Trust me, once you try them, you’ll never go back to ordinary tacos again. And if you don’t like feta, don’t skip out just yet. You can always swap it for parmesan or mozzarella!

The Chipotle Chicken

Let’s kick things off with the star of the show – the chipotle chicken. This recipe is already super popular on the blog and it is one of my favorite weeknight dinners to make. It’s meant to be a Chipotle restaurant copycat -it’s full of so much flavor and spice. It’s delicious on tacos, in rice bowls, a burrito, or even salad. Now this recipes works well with chicken thighs or chicken breast, it really just depends on your taste and preference.

Start by marinating the chicken in a bowl with olive oil, garlic, chipotle adobo paste, chili powder, cumin, salt, and black pepper. You can buy a can of chipotle peppers in adobo paste from most major supermarkets in the international food aisle. Depending on the store you go to, there will be different brands. Any will do but my fave brand is Embasa! I only use the adobo paste, not the peppers, in the can for this recipe but if you would like it to be spicy, you can add the whole can to a blender and then add it in to make the sauce.

You can marinate the chicken right before cooking or if you have time, let it sit for 30 minutes, one hour, many hours, or even overnight for maximum flavor. Cook the chicken in a pan over medium-high heat until seared, golden brown, and fully cooked through. If there are some bits stuck to the pan, add a splash of water to deglaze the pan and get the flavor back on to the chicken.

Tip: Don’t be afraid to play around with the spice levels to suit your taste. Add more chipotle peppers for extra heat or dial it back if you prefer a milder flavor.

Also, you can choose to cook the thighs or breast whole and then chop after cooked or chop it before cooking and marinating. I have tried both methods and both are great. I will say the first method will result in a juicer chicken though.

Making the Crispy Feta Tacos

Now, let’s talk about the game-changer that makes this recipe unlike any other – the crispy feta-crusted tortillas. Imagine a crispy tortilla laced with a layer of grilled feta cheese, creating a deliciously crunchy crust. It’s the perfect complement to the smoky chipotle chicken! Simply heat a skillet, sprinkle on the feta cheese, and place a tortilla on top until it crisps up to perfection.

Note: If you’re feeling adventurous, try experimenting with different types of cheese for the crust. Pepper jack if you love spice. Monterey jack to keep it simple. Or parmesan if you love its flavor!

The Fun Part: Toppings!

Time to bring it all together! Layer your feta-crusted tortillas with shredded lettuce, the chipotle chicken, creamy avocado, sweet corn, and a dollop of sour cream. The combination of flavors and textures is out of this world! Don’t be shy to get creative with your toppings – the more, the merrier. Some other options include a delicious salsa, some tomatoes or pico de gallo, guacamole, pinto beans, or even some red onions!

Ingredients

CHIPOTLE CHICKEN
  • 2 pounds boneless and skinless chicken thighs or chicken breast
  • 1/4 cup olive oil, chopped
  • 7-ounce can chipotle peppers in adobo paste, remove the chipotle peppers
  • 2 teaspoons fresh garlic or 1/2 tsp garlic powder
  • 1/2 tablespoon chili powder
  • 1 1/2 teaspoon salt to taste
  • 1 teaspoon coriander
  • 1 teaspoon oregano
  • 1 teaspoon black pepper
  • 1 teaspoon cumin
  • drizzle of vegetable oil, for the pan
FETA CRUSTED TACOS
  • 1 cup feta cheese, crumbled
  • 8 mini flour tortillas
  • oil, for coating the pan
FOR ASSEMBLY
  • shredded lettuce
  • avocado
  • corn
  • sour cream

Instructions

MAKE THE CHICKEN
  1. To a large bowl, add the chicken, olive oil, adobo paste, chili powder, garlic, salt, coriander, oregano, black pepper, and cumin. Mix all together to coat the chicken evenly in the marinade.
  2. Heat a cast-iron skillet over medium-high heat. Once it's hot, add a drizzle of oil to the pan. Add the chicken in.
  3. Allow it to sear for 2 to 3 minutes before shaking it around and cooking for 2 to 3 minutes on all sides until fully cooked through.
  4. Add a splash of water to the pan if needed to deglaze the pan. Scrape the bottom of the pan to get all the crispy flavorful bits stuck at the bottom.
PREP THE TACOS
  1. Heat a non-stick skillet/pan over medium heat. Add a light drizzle of oil to the skillet.
  2. Once hot, add about 2 tablespoons of crumbled feta cheese to the skillet and spread it out in an even layer.
  3. Place a flour tortilla on top of the feta cheese in the skillet, pressing it down gently to adhere to the cheese.
  4. Let the tortilla cook for about 2-3 minutes, or until the bottom and edges are golden brown and crispy. Remove from the pan and repeat with the rest of the tortillas.
ASSEMBLE
  1. To the feta-crusted tortilla, add lettuce, chipotle chicken, avocado, corn, and sour cream. Feel free to tweak the toppings to your taste and enjoy!
