Everything Bagel Focaccia

Bagel meets focaccia in this epic bread collaboration! The focaccia turns out so crispy and bubbly and the everything bagel flavor is incredible. It’s even better when you stuff it with scallion cream cheese!

The Dough

The dough is pretty easy to make for focaccia and comes together quickly! The only thing is the dough is very tired and needs a lot of rest so there is a lot of downtime. The best way to make this recipe is to prepare the dough the morning before and bake the next day. It’s the key to getting all those bubbles – REST!

To a large mixing bowl, add the following ingredients:

  • all-purpose flour
  • salt
  • active dry yeast
  • lukewarm water
  • sugar

Bring the dough together using a hook attachment on a stand mixer or use a wooden spoon/rubber spatula. You CANNOT knead it by hand because the dough is a lot more sticky than other breads. Mix together until you have a soft and elastic dough. It should be a bit sticky but not too difficult to handle.

To a bowl, add a generous amount of olive oil, transfer the dough, cover, and then it’s time for the resting and folding process.

Folding the Dough

If you’ve made the other focaccia recipe on the blog before, this step will sound new. That’s the beauty of baking and cooking – there is always room for improvement. The process of resting and folding the dough before popping it in the fridge overnight helps create layers to form bubbles and it truly is necessary to achieve the perfect focaccia.

After covering the dough, let it rest on the countertop for 30 to 45 minutes. Then uncover and add a bit of oil or water to your hands to prevent sticking. Grab one edge of the dough, pull up, stretch, and then fold over. Repeat with another edge of the dough to do this 4 times in total. Cover the dough again and rest for 30 to 45 minutes. You will do this process of resting and folding a total of 3 times. If you are an overachiever, do it 4 times.

Now pop it in the fridge to rest overnight or at least 24 hours. This resting time will allow the gluten to arrange itself into a structure that will make the dough easier for you to stretch around and be very bubbly. It’s not focaccia without those large bubbles!

Baking the Focaccia

The next day, about 2 to 3 hours before baking the focaccia, take out the dough. Oil a 9×13 deep baking pan really well with olive oil and transfer the dough in. Cover and let the dough come to room temperature and proof.

Once it is proofed and bubbly, add a drizzle of olive oil on the top and use your fingers to dimple the dough all across to stretch out the dough and create little indents. Make sure your hands are oiled well so the dough doesn’t stick to your fingers. Drizzle a bit more olive oil on top. Add a sprinkle of everything bagel seasoning.

Pop in the oven to bake at 425°F for about 20 to 30 minutes or until golden and crispy on top and along the edges.

Once out of the oven, take it out of the baking pan and allow it to cool for a few minutes. Then slice into squares. If you want to serve it with scallion cream cheese, here is how to make it:

  1. add a block of cream cheese and a splash of heavy cream to a mixing bowl.
  2. beat together with the whisk attachment until fluffy and airy
  3. add in the chopped scallions and combine

Slice open the focaccia and add the scallion cream cheese to enjoy fresh and warm!

If you have any leftovers, transfer to an airtight container and you can reheat it in the oven or air fryer the next day to crisp it back up. It’ll taste fresh just like the first day!

Ingredients

FOCACCIA
  • 4 2/3 cup all purpose flour
  • 2 1/4 teaspoon salt
  • 1 teaspoon granulated white sugar
  • 2 1/4 teaspoons active dry yeast
  • 2 1/3 cup water, lukewarm
  • 8 tablespoons olive oil, split in half
  • 1 tablespoon everything bagel seasoning
SCALLION CREAM CHEESE
  • 8 ounces cream cheese, room temperature
  • 2 tablespoons heavy cream
  • 4 scallions, sliced thinly
  • 1/4 cup grated parmesan
  • black pepper, to taste
  • garlic powder, to taste

Instructions

  1. To a large mixing bowl or stand mixer bowl, add water, salt, sugar, and active dry yeast. Whisk together well.
  2. Add the all-purpose flour to the bowl and bring together until a soft and elastic dough forms.
  3. To another bowl, add olive oil to grease it generously.
  4. Transfer the dough to the bowl, cover tightly with Saran Wrap, and let it sit on the counter for 45 minutes.
  5. After 45 minutes uncover and cover hands in oil or dip in a little water and start folding the dough, around 4 times going around. Do this by pulling an edge up and out and folding over, then rotate and repeat 4 times.
  6. Let it rest another 30 minutes and repeat the process. You can either repeat this for a third time after or stop after two. Three to four times is ideal though.
  7. Place in the fridge to rest overnight or 24 hours for best results.
  8. The next morning, take out the dough.
  9. Grease a 9x13 pan with half of the oil, about 3 to 4 tablespoons.
  10. Transfer the dough to the greased pan. Now let the dough rest for 2 to up to 4 hours until it comes to room temperature.
  11. Preheat oven to 425°F.
  12. Add the rest of the olive oil on top. Using your fingers coated in oil as well, make dimples in the dough all across. Sprinkle everything bagel seasoning on top.
  13. Bake in the oven for 20 to 30 minutes or until golden and crispy along the top and edges.
  14. Take it out of the oven, allow it to cool for about 10 to 15 minutes, and then slice it into squares.
  15. Enjoy with scallion cream cheese!
